Proteolysis in Serbian Traditional Dry Fermented Sausage Petrovská klobása as Influenced by Different Ripening Processes

The aim of the study was to determine how different ripening processes (traditional vs. industrial) influenced the proteolysis in traditional Serbian dry-fermented sausage Petrovská klobása. The obtained results indicated more intensive pH decline (0.7 units after 9 days) in industrially ripened products (I), what had a positive impact on drying process and proteolytic changes in these samples. Thus, moisture content in I sausages was lower at each sampling time, amounting 24.7% at the end of production period (90 days). Likewise, the process of proteolysis was more pronounced in I samples, resulting in higher contents of non-protein nitrogen (NPN) and free amino acids nitrogen (FAAN), as well as in faster and more intensive degradation of myosin (≈220 kDa), actin (≈45 kDa) and other polypeptides during processing. Consequently, the appearance and accumulation of several protein fragments were registered.

The Effect of Seed Inoculation (Pseudomonas putida+Bacillus lentus) and Different Levels of Fertilizers on Yield and Yield Components of Wheat (Triticum aestivum L.) Cultivars

In order to study of The Effect of seed inoculation with Pseudomonas putida+Bacillus lentus on yield and yield components of wheat (Triticum aestivum L.) cultivars, an experiment was carried out as factorial based on Randomized Complete Block Design (RCBD) in Agricultural Research Station of Shahrood University of Technology. Results showed that inoculation with Pseudomonas putida+Bacillus lentus promoted seed germination. Also, inoculation with Pseudomonas putida+Bacillus lentus significantly affected grain yield, Number of spikes per m2, Number of grain per spike and 1000-seed weight and There was not statistically significant difference between Chamran and Pishtaz cultivars . Finally, the dosages of chemical fertilizers currently applied in commercial wheat field in Iran (Shahrood region) could be reduced through proper combination of Pseudomonas putida+Bacillus lentus inoculation plus fertilization.

Separation of Polyphenolics and Sugar by Ultrafiltration: Effects of Operating Conditions on Fouling and Diafiltration

Polyphenolics and sugar are the components of many fruit juices. In this work, the performance of ultra-filtration (UF) for separating phenolic compounds from apple juice was studied by performing batch experiments in a membrane module with an area of 0.1 m2 and fitted with a regenerated cellulose membrane of 1 kDa MWCO. The effects of various operating conditions: transmembrane pressure (3, 4, 5 bar), temperature (30, 35, 40 ºC), pH (2, 3, 4, 5), feed concentration (3, 5, 7, 10, 15 ºBrix for apple juice) and feed flow rate (1, 1.5, 1.8 L/min) on the performance were determined. The optimum operating conditions were: transmembrane pressure 4 bar, temperature 30 ºC, feed flow rate 1 – 1.8 L/min, pH 3 and 10 Brix (apple juice). After performing ultrafiltration under these conditions, the concentration of polyphenolics in retentate was increased by a factor of up to 2.7 with up to 70% recovered in the permeate and with approx. 20% of the sugar in that stream.. Application of diafiltration (addition of water to the concentrate) can regain the flux by a factor of 1.5, which has been decreased due to fouling. The material balance performed on the process has shown the amount of deposits on the membrane and the extent of fouling in the system. In conclusion, ultrafiltration has been demonstrated as a potential technology to separate the polyphenolics and sugars from their mixtures and can be applied to remove sugars from fruit juice.

A Pairwise-Gaussian-Merging Approach: Towards Genome Segmentation for Copy Number Analysis

Segmentation, filtering out of measurement errors and identification of breakpoints are integral parts of any analysis of microarray data for the detection of copy number variation (CNV). Existing algorithms designed for these tasks have had some successes in the past, but they tend to be O(N2) in either computation time or memory requirement, or both, and the rapid advance of microarray resolution has practically rendered such algorithms useless. Here we propose an algorithm, SAD, that is much faster and much less thirsty for memory – O(N) in both computation time and memory requirement -- and offers higher accuracy. The two key ingredients of SAD are the fundamental assumption in statistics that measurement errors are normally distributed and the mathematical relation that the product of two Gaussians is another Gaussian (function). We have produced a computer program for analyzing CNV based on SAD. In addition to being fast and small it offers two important features: quantitative statistics for predictions and, with only two user-decided parameters, ease of use. Its speed shows little dependence on genomic profile. Running on an average modern computer, it completes CNV analyses for a 262 thousand-probe array in ~1 second and a 1.8 million-probe array in 9 seconds

An Assessment of Food Control System and Development Perspective: The Case of Myanmar

Food control measures are critical in fostering food safety management of a nation. However, no academic study has been undertaken to assess the food control system of Myanmar up to now. The objective of this research paper was to assess the food control system with in depth examination of five key components using desktop analysis and short survey from related food safety program organizations including regulators and inspectors. Study showed that the existing food control system is conventional, mainly focusing on primary health care approach while relying on reactive measures. The achievements of food control work have been limited to a certain extent due to insufficienttechnical capacity that is needed to upgrade staffs, laboratory equipment and technical assistance etc. associated with various sectors. Assessing food control measures is the first step in the integration of food safety management, this paper could assist policy makers in providing information for enhancing the safety and quality of food produced and consumed in Myanmar.

Flour and Bread Quality of Spring Spelt

The article contains results of the flour and bread quality assessment from the grains of spring spelt, also called as an ancient wheat. Spelt was cultivated on heavy and medium soils observing principles of organic farming. Based on flour and bread laboratory studies, as well as laboratory baking, the technological usefulness of studied flour has been determined. These results were referred to the standard derived from common wheat cultivated in the same conditions. Grain of spring spelt is a good raw material for manufacturing bread flour, from which to get high-quality bakery products, but this is strictly dependent on the variety of ancient wheat.

Intragenic MicroRNAs Binding Sites in MRNAs of Genes Involved in Carcinogenesis

MiRNAs participate in gene regulation of translation. Some studies have investigated the interactions between genes and intragenic miRNAs. It is important to study the miRNA binding sites of genes involved in carcinogenesis. RNAHybrid 2.1 and ERNAhybrid programmes were used to compute the hybridization free energy of miRNA binding sites. Of these 54 mRNAs, 22.6%, 37.7%, and 39.7% of miRNA binding sites were present in the 5'UTRs, CDSs, and 3'UTRs, respectively. The density of the binding sites for miRNAs in the 5'UTR ranged from 1.6 to 43.2 times and from 1.8 to 8.0 times greater than in the CDS and 3'UTR, respectively. Three types of miRNA interactions with mRNAs have been revealed: 5'- dominant canonical, 3'-compensatory, and complementary binding sites. MiRNAs regulate gene expression, and information on the interactions between miRNAs and mRNAs could be useful in molecular medicine. We recommend that newly described sites undergo validation by experimental investigation.

Stress Relaxation of Date at Different Temperature and Moisture Content of Product: A New Approach

Iran is one of the greatest producers of date in the world. However due to lack of information about its viscoelastic properties, much of the production downgraded during harvesting and postharvesting processes. In this study the effect of temperature and moisture content of product were investigated on stress relaxation characteristics. Therefore, the freshly harvested date (kabkab) at tamar stage were put in controlled environment chamber to obtain different temperature levels (25, 35, 45, and 55 0C) and moisture contents (8.5, 8.7, 9.2, 15.3, 20, 32.2 %d.b.). A texture analyzer TAXT2 (Stable Microsystems, UK) was used to apply uniaxial compression tests. A chamber capable to control temperature was designed and fabricated around the plunger of texture analyzer to control the temperature during the experiment. As a new approach a CCD camera (A4tech, 30 fps) was mounted on a cylindrical glass probe to scan and record contact area between date and disk. Afterwards, pictures were analyzed using image processing toolbox of Matlab software. Individual date fruit was uniaxially compressed at speed of 1 mm/s. The constant strain of 30% of thickness of date was applied to the horizontally oriented fruit. To select a suitable model for describing stress relaxation of date, experimental data were fitted with three famous stress relaxation models including the generalized Maxwell, Nussinovitch, and Pelege. The constant in mentioned model were determined and correlated with temperature and moisture content of product using non-linear regression analysis. It was found that Generalized Maxwell and Nussinovitch models appropriately describe viscoelastic characteristics of date fruits as compared to Peleg mode.

Enriching Egg Yolk with Carotenoids and Phenols

Dried tomato peel (DTP) was tested in vivo (n=10) in 42 week-old laying hens at rates of 0, 40, 70, 100 and 130g/kg DM feed. Laying hens were fed in group 120 g DM/day/animal for 26 days. After 21 days, feed intake was not affected after DTP incorporation (97% of the offered feed in the five groups). Laying rate was not significantly different after DTP incorporation at 4 and 10% from the control group. Leaf Chlorophyll of Corn, Sweet basil and Borage under Intercropping System in Weed Interference

Intercropping is one of the sustainable agricultural factors. The SPAD meter can be used to predict nitrogen index reliably, it may also be a useful tool for assessing the relative impact of weeds on crops. In order to study the effect of weeds on SPAD in corn (Zea mays L.), sweet basil (Ocimum basilicum L.) and borage (Borago officinalis L.) in intercropping system, a factorial experiment was conducted in three replications in 2011. Experimental factors were included intercropping of corn with sweet basil and borage in different ratios (100:0, 75:25, 50:50, 25:75 and 0:100 corn: borage or sweet basil) and weed infestation (weed control and weed interference). The results showed that intercropping of corn with sweet basil and borage increased the SPAD value of corn compare to monoculture in weed interference condition. Sweet basil SPAD value in weed control treatments (43.66) was more than weed interference treatments (40.17). Corn could increase the borage SPAD value compare to monoculture in weed interference treatments.

The Residual Effects of Different Doses of Atrazine+Alachlor and Foramsulfuron on the Growth and Physiology of Rapeseed (Brassica napus L.)

A pot experiment was carried out under controlled conditions to evaluate the residual effects of different doses of atrazine+alachlor and foramsulfuron used in corn fields on the growth and physiology of rapeseed (Brassica napus L.). A split-plot experiment in CRD with 4 replications was used. The main plots consisted of herbicide type (atrazine+alachlor mixture and foramsulfuron) and the sub-plots were different residual doses of the herbicides (0, 1%, 5%, 10%, 20%, 40%, 50% and 100%). 7 cm diameter pots were filled with a virgin soil and seeds of rapeseed cv. Hayola were planted in them. The pots were kept under controlled conditions for 8 weeks after germination. At harvest, the growth parameters and the chlorophyll contents of the leaves were determined. The results showed that the growth of rapeseed plants was completely prevented at the highest residual doses of the herbicides (50 and 100 %). The growth parameters of rapeseed plants were affected by all doses of both types of the herbicide as compared to the controls. The residual effects of atrazine+alachlor mixture in reducing the growth parameters of rapeseed were more pronounced as compared to the residual effects of foramsulfuron alone.

Technique for Processing and Preservation of Human Amniotic Membrane for Ocular Surface Reconstruction

Human amniotic membrane (HAM) is a useful biological material for the reconstruction of damaged ocular surface. The processing and preservation of HAM is critical to prevent the patients undergoing amniotic membrane transplant (AMT) from cross infections. For HAM preparation human placenta is obtained after an elective cesarean delivery. Before collection, the donor is screened for seronegativity of HCV, Hbs Ag, HIV and Syphilis. After collection, placenta is washed in balanced salt solution (BSS) in sterile environment. Amniotic membrane is then separated from the placenta as well as chorion while keeping the preparation in BSS. Scrapping of HAM is then carried out manually until all the debris is removed and clear transparent membrane is acquired. Nitrocellulose membrane filters are then placed on the stromal side of HAM, cut around the edges with little membrane folded towards other side making it easy to separate during surgery. HAM is finally stored in solution of glycerine and Dulbecco-s Modified Eagle Medium (DMEM) in 1:1 ratio containing antibiotics. The capped borosil vials containing HAM are kept at -80°C until use. This vial is thawed to room temperature and opened under sterile operation theatre conditions at the time of surgery.

Haematological Characterization of Reproductive Status at Laying Hens by Age

Physiological activity of the pineal gland with specific responses in the reproductive territory may be interpreted by monitoring the process parameters used in poultry practice in different age batches of laying hens. As biological material were used 105 laying hens, clinically healthy, belonging to ALBO SL- 2000 hybrid, raised on ground, from which blood samples were taken at the age of 12 and 28 weeks. The haematological examinations were concerned to obtain the total number of erythrocytes and leukocytes and the main erythrocyte constant (RBC, PCV, MCV, MCH, MCHC and WBC). The results allow the interpretation of the reproductive status through the dynamics of the presented values.

Thermal Treatment Influence on the Quality of Rye Bread Packaged in Different Polymer Films

this study was carried out to investigate the changes in quality parameters of rye bread packaged in different polymer films during convection air-flow thermal treatment process. Whole loafs of bread were placed in polymer pouches, which were sealed in reduced pressure air ambiance, bread was thermally treated in at temperature +(130; 140; and 150) ± 5 ºC within 40min, as long as the core temperature of the samples have reached accordingly +80±1 ºC. For bread packaging pouches were used: anti-fog Mylar®OL12AF and thermo resistant combined polymer material. Main quality parameters was analysed using standard methods: temperature in bread core, bread crumb and crust firmness value, starch granules volume and microflora. In the current research it was proved, that polymer films significantly influence rye bread quality parameters changes during thermal treatment. Thermo resistant combined polymer material film could be recommendable for packaged rye bread pasteurization, for maximal bread quality parameter keeping.

Effects of Different Plant Densities on the Yield and Quality of Second Crop Sesame

Sesame is one of the oldest and most important oil crops as main crop and second crop agriculture. This study was carried out to determine the effects of different inter- and intra-row spacings on the yield and yield components on second crop sesame; was set up in Antalya West Mediterranean Agricultural Research Institue in 2009. Muganlı 57 sesame cultivar was used as plant material. The field experiment was set up in a split plot design and row spacings (30, 40, 50, 60 and 70 cm) were assigned to the main plots and and intra-row spacings (5, 10, 20 and 30 cm) were assigned to the subplots. Seed yield, oil ratio, oil yield, protein ratio and protein yield were investigated. In general, wided inter row spacings and intra-row spacings, resulted in decreased seed yield, oil yield and protein yield. The highest seed yield, oil yield and protein yield (respectively, 1115.0 kg ha-1, 551.3 kg ha-1, 224.7 kg ha-1) were obtained from 30x5 cm plant density while the lowest seed yield, oil yield and protein yield (respectively, 677.0 kg ha-1, 327.0 kg ha-1, 130.0 kg ha-1) were recorded from 70x30 cm plant density. As a result, in terms of oil yield for second crop sesame agriculture, 30 cm row spacing, and 5 cm intra row spacing are the most suitable plant densities.

Protein Secondary Structure Prediction

Protein structure determination and prediction has been a focal research subject in the field of bioinformatics due to the importance of protein structure in understanding the biological and chemical activities of organisms. The experimental methods used by biotechnologists to determine the structures of proteins demand sophisticated equipment and time. A host of computational methods are developed to predict the location of secondary structure elements in proteins for complementing or creating insights into experimental results. However, prediction accuracies of these methods rarely exceed 70%.

Static Headspace GC Method for Aldehydes Determination in Different Food Matrices

Aldehydes as secondary lipid oxidation products are highly specific to the oxidative degradation of particular polyunsaturated fatty acids present in foods. Gas chromatographic analysis of those volatile compounds has been widely used for monitoring of the deterioration of food products. Developed static headspace gas chromatography method using flame ionization detector (SHS GC FID) was applied to monitor the aldehydes present in processed foods such as bakery, meat and confectionary products. Five selected aldehydes were determined in samples without any sample preparation, except grinding for bakery and meat products. SHS–GC analysis allows the separation of propanal, pentanal, hexanal, heptanal and octanal, within 15min. Aldehydes were quantified in fresh and stored samples, and the obtained range of aldehydes in crackers was 1.62±0.05 – 9.95±0.05mg/kg, in sausages 6.62±0.46 – 39.16±0.39mg/kg; and in cocoa spread cream 0.48±0.01 – 1.13±0.02mg/kg. Referring to the obtained results, the following can be concluded, proposed method is suitable for different types of samples, content of aldehydes varies depending on the type of a sample, and differs in fresh and stored samples of the same type.

Incidence, Occurrence, Classification and Outcome of Small Animal Fractures: A Retrospective Study (2005-2010)

A retrospective study was undertaken to record the occurrence and pattern of fractures in small animals (dogs and cats) from year 2005 to 2010. A total of 650 cases were presented in small animal surgery unit out of which of 116 (dogs and cats) were presented with history of fractures of different bones. A total of 17.8% (116/650) cases were of fractures which constituted dogs 67% while cats were 23%. The majority of animals were intact. Trauma in the form of road side accident was the principal cause of fractures in dogs whereas as in cats it was fall from height. The ages of the fractured dog ranged from 4 months to 12 years whereas in cat it was from 4 weeks to 10 years. The femoral fractures represented 37.5% and 25% respectively in dogs and cats. Diaphysis, distal metaphyseal and supracondylar fractures were the most affected sites in dog and cats. Tibial fracture in dogs and cats represented 21.5% and 10% while humoral fractures were 7.9% and 14% in dogs and cats respectively. Humoral condyler fractures were most commonly seen in puppies aged 4 to 6 months. Fractured radius-ulna incidence was 19% and 14% in dogs and cats respectively. Other fractures recorded were of lumbar vertebrae, mandible and metacarpals etc. The management comprised of external and internal fixation in both the species. The most common internal fixation technique employed was Intramedullary fixation in long followed by other methods like stack or cross pinning, wiring etc as per findings in the cases. The cast bandage was used majorly as mean for external coaptation. The paper discusses the outcome of the case as per the technique employed.

Influence of Static Pressure on Viability of Entomopathogenic Nematodes – Steinernema feltiae

The entomopathogenic nematodes Steinernema feltiaeare are components of many biological pesticides. The biological pesticides are applicated by means a spraying machines. The influence of high pressure operating time on viability of nematodes has been experimentally investigated in order to explain if static pressure inside of the sprayers installation was able to destroy nematodes. The value of pressure was 55 MPa and its maximum operating time was 3 hours. Changes were found in viability of pressurized samples of nematodes, mixed with water.
