Abstract: The present study addresses problems and solutions
related to new functional food production. Wheat (Triticum aestivum
L) bran obtained from industrial mill company “Dobeles
dzirnavieks”, was used to investigate them as raw material like
nutrients for Bifidobacterium lactis Bb-12. Enzymatic hydrolysis of
wheat bran starch was carried out by α-amylase from Bacillus
amyloliquefaciens (Sigma Aldrich). The Viscozyme L purchased
from (Sigma Aldrich) were used for reducing released sugar.
Bifidibacterium lactis Bb-12 purchased from (Probio-Tec® CHR
Hansen) was cultivated in enzymatically hydrolysed wheat bran
mash. All procedures ensured the number of active Bifidobacterium
lactis Bb-12 in the final product reached 105 CFUg-1. After enzymatic
and bacterial fermentations sample were freeze dried for analysis of
chemical compounds. All experiments were performed at Faculty of
Food Technology of Latvia University of Agriculture in January-
March 2013. The obtained results show that both types of wheat bran
(enzymatically treated and non-treated) influenced the fermentative
activity and number of Bifidibacterium lactis Bb-12 viable in wheat
bran mash. Amount of acidity strongly increase during the wheat
bran mash fermentation. The main objective of this work was to
create low-energy functional enzymatically and bacterially treated
food from wheat bran using enzymatic hydrolysis of carbohydrates
and following cultivation of Bifidobacterium lactis Bb-12.
Abstract: Potato is one of the main components of warm meals in Latvia. Consumption of fried potatoes in Latvia is the highest comparing to Nordic and other Baltic countries. Therefore acrylamide (AA) intake coming from fried potatoes in population might be high as well. The aim of the research was to determine AA content in traditionally cooked potatoes bred and cultivated in Latvia. Five common Latvian potato varieties were selected: Lenora, Brasla, Imanta, Zile and Madara. A two-year research was conducted during two periods: just after harvesting and after six months of storage. The following cooking methods were used: shallow frying (150 ± 5 °C); deep-fat frying (180 ± 5 °C) and roasting (210 ± 5 °C). Time and temperature was recorded during frying. Abstract: Experiments have been carried out at the Latvia
University of Agriculture Department of Food Technology. The aim
of this work was to assess the effect of thermal treatment in flexible
retort pouch packaging on the quality of potatoes’ produce during the
storage time. Samples were evaluated immediately after retort
thermal treatment; and following 1; 2; 3 and 4 storage months at the
ambient temperature of +18±2ºC in vacuum packaging from
polyamide/polyethylene (PA/PE) and aluminum/polyethylene
(Al/PE) film pouches with barrier properties. Experimentally the
quality of the potatoes’ produce in dry butter and mushroom
dressings was characterized by measuring pH, hardness, color,
microbiological properties and sensory evaluation. The sterilization
was effective in protecting the produce from physical, chemical, and
microbial quality degradation. According to the study of obtained
data, it can be argued that the selected product processing technology
and packaging materials could be applied to provide the safety and
security during four-month storage period.
Abstract: Tasks of the work were study the possible E.coli
contamination in red deer meat, identify pathogenic strains from
isolated E.coli, determine their incidence in red deer meat and
determine the presence of VT1, VT2 and eaeA genes for the
pathogenic E.coli. 8 (10%) samples were randomly selected from 80
analysed isolates of E.coli and PCR reaction was performed on them.
PCR was done both on initial materials – samples of red deer meat -
and for already isolated liqueurs. Two of analysed venison samples
contain verotoxin-producing strains of E. coli. It means that this meat
is not safe to consumer. It was proven by the sequestration reaction of
E. coli and by comparison of the obtained results with the database of
microorganism genome available on the internet that the isolated
culture corresponds to region 16S rDNS of E. coli thus presenting
correctness of the microbiological methods.
Abstract: The paper presents a set of guidelines for analysis of industrial embedded distributed systems and introduces a mathematical model derived from these guidelines. In this study, the author examines a set of modern communication technologies that are or possibly can be used to build communication links between the subsystems of a distributed embedded system. An investigation of these guidelines results in a algorithm for analysis of specific use cases of target technologies. A goal of the paper acts as an important base for ongoing research on comparison of communication technologies. The author describes the principles of the model and presents results of the test calculations. Practical implementation of target technologies and empirical experiment data are based on a practical experience during the design and test of specific distributed systems in Latvian market.
Abstract: The aim of the study was to evaluate the effect of
texturizers on the rheological properties of the apple mass and
desserts made from various raw materials. The apple varieties -
‘Antonovka’, ‘Baltais Dzidrais’, and ‘Zarja Alatau’ harvested in
Latvia, were used for the experiment. The apples were processed in a
blender unpeeled for obtaining a homogenous mass. The apple mass
was analyzed fresh and after storage at –18ºC. Both fresh and thawed
apple mass samples with added gelatin, xantan gum, and sodium
carboxymethylcellulose were whisked obtaining dessert. Pectin, pH
and soluble dry matter of the product were determined. Apparent

Abstract: Creating shared value (CSV) is a newly introduced
concept whose essence and expressions, relationship to Corporate
social responsibility (CSR) and implications for the business and
society is now at the core of management and social responsibility
debates of the scientific world. The aim of the paper is to gain clearer
understanding of the CSR and CSV concepts, their implementation
and role in sustainable development of organizations in Latvia. In this
paper the authors discuss and compare the two conceptsand, based on
the results of Sustainability Index (SI) initiative and analysis of
publically available company information, evaluate their
implementation in Latvia and draw conclusions on the development

and compared with traditional packaging in air ambiance. Polymer
Multibarrier 60, PP and OPP bags were used. Influence of iron based
oxygen absorber in sachets of 100 cc obtained from Mitsubishi Gas
Chemical Europe Ageless® was tested on the quality during the shelf
of wheat bread. Samples of 40±4 g were packaged in polymer
pouches (110 mm x 120 mm), hermetically sealed by MULTIVAC
C300 vacuum chamber machine, and stored in room temperature
+21.0±0.5 °C. The physiochemical properties – weight losses,
moisture content, hardness, pH, colour, changes of atmosphere
content (CO2 and O2) in headspace of packs, and microbial
conditions were analysed before packaging and in the 7th, 14th, 21st
and 28th days of storage.
Abstract: Fast development of technologies, economic globalization and many other external circumstances stimulate company’s competitiveness. One of the major trends in today’s business is the shift to the exploitation of the Internet and electronic environment for entrepreneurial needs. Latest researches confirm that e-environment provides a range of possibilities and opportunities for companies, especially for micro-, small- and medium-sized companies, which have limited resources. The usage of e-tools raises the effectiveness and the profitability of an organization, as well as its competitiveness.
In the electronic market, as in the classic one, there are factors, such as globalization, development of new technology, price sensitive consumers, Internet, new distribution and communication channels that influence entrepreneurship. As a result of eenvironment development, e-commerce and e-marketing grow as well.
Objective of the paper: To describe and identify factors influencing company’s competitiveness in e-environment.
Research methodology: The authors employ well-established quantitative and qualitative methods of research: grouping, analysis, statistics method, factor analysis in SPSS 20 environment, etc. The theoretical and methodological background of the research is formed by using scientific researches and publications, such as that from mass media and professional literature; statistical information from legal institutions as well as information collected by the authors during the surveying process.

Abstract: Thisresearch paper is dedicated to an actual issue in Latvia and in the whole European Union – development of the secondary materials management. The goal of this paper is to research the development of the secondary materials management in Latvia as a result to point out its main positive aspects and problems. In this research paper the author regards following issues: significance of the secondary materials management, current situation of the waste generation and utilization in Latvia comparing with other EU Member States, main problems and positive aspects of the secondary materials management in Latvia. The research author concludes that in last ten years a great work is done to develop the secondary materials market. Nevertheless following improvements are necessary: implementation of the packaging deposit system, development of the separate waste collection, increasing of the recycling capacity.
Abstract: Environmental contamination is a common problem in ex-industrial and industrial sites. This article gives a brief description of general applied environmental investigation methodologies and possible remediation applications in Latvia. Most of contaminated areas are situated in former and active industrial, military areas and ports. Industrial and logistic activities very often have been with great impact for more than hundred years thus the contamination level with heavy metals, hydrocarbons, pesticides, persistent organic pollutants is high and is threatening health and environment in general. 242 territories now are numbered as contaminated and fixed in the National Register of contaminated territories in Latvia. Research and remediation of contamination in densely populated areas are of important environmental policy domain. Four different investigation case studies of contaminated areas are given describing the history of use, environmental quality assessment as well as planned environmental management actions. All four case study locations are situated in Riga - the capital of the Republic of Latvia. The aim of this paper is to analyze the situation and problems with management of contaminated areas in Latvia, give description of field research methods and recommendations for remediation industry based on scientific data and innovations.
Abstract: The purposes of researches - to estimate implicit ethnic attitudes by direct and indirect methods, to determine the accordance of two types measuring, to investigate influence of task type used in an experiment, on the results of measuring, as well as to determine a presence or communication between recent episodic events and chronologic correlations of ethnic attitudes. Method of the implicit measuring - an evaluative priming (EPT) carried out with the use of different SOA intervals, explicit methods of research are G.Soldatova-s types of ethnic identity, G.Soldatova-s index of tolerance, E.Bogardus scale of social distance. During five stages of researches received results open some aspects of implicit measuring, its correlation with the results of self-reports on different SOA intervals, connection of implicit measuring with emotional valence of episodic events of participants and other indexes, presenting a contribution to the decision of implicit measuring application problem for study of different social constructs
Abstract: Aroma forming volatiles are important components of
fermented beverages. The aim of current research is to evaluate the
volatile compounds and phenolic compounds of commercial ciders.
Volatile aroma compounds and TPC of seven commercial ciders
were determined. Extraction of aroma compounds was performed
using solid phase microextraction (DVB/Car/PDMS fibre). Analysis
of volatile aroma compounds was made using a Perkin Elmer Clarus
500 GC/MS. Total phenol content (TPC) was determined according
to the Folin-Ciocalteu spectrophotometric method and results were
expressed as gallic acid equivalents. The highest volatile compounds
were in apple ciders with pear flavor. The highest TPC and lower
content of volatile compounds were detected in French ciders.
Abstract: Experiments with pumpkin-rowanberry marmalade
candies were carried out at the Faculty of Food Technology of the
Latvia University of Agriculture. The objective of this investigation
was to evaluate the quality changes of pumpkin-rowanberry
marmalade candies packed in different packaging materials during
the storage of 15 weeks, and to find the most suitable packaging
material for prolongation of low sugar marmalade candies shelf-life.

Abstract: Integrative teaching methodology is based on
connecting and summarizing knowledge from different subjects in
order to create better understanding of different disciplines and
improvement of competences in general. Integrative teaching
methodology was implemented and realised during one academic
year in 17 Latvian schools according with specially worked out
programme by specialists of different fields for adaptation in social
environment of children and young people with learning, cognitive
functions and motor disorders. Implemented integrative teaching
methodology consisted from three subsections which were
specialised for adaptation in social environment, improvement of
cognitive functions and improvement and harmonization of
personality. The results of investigation showed that the use of
integrative teaching methodology is an effective way for
improvement of learning motivation and negotiation of learning
disorders of different age schoolchildren.

Abstract: Latvia is the fourth in the world by means of broadband internet speed. The total number of internet users in Latvia exceeds 70% of its population. The number of active mailboxes of the local internet e-mail service Inbox.lv accounts for 68% of the population and 97.6% of the total number of internet users. The Latvian portal Draugiem.lv is a phenomenon of social media, because 58.4 % of the population and 83.5% of internet users use it. A majority of Latvian company profiles are available on social networks, the most popular being Twitter.com. These and other parameters prove the fact consumers and companies are actively using the Internet.
However, after the authors in a number of studies analyzed how enterprises are employing the e-environment, namely, e-environment tools, they arrived to the conclusions that are not as flattering as the aforementioned statistics. There is an obvious contradiction between the statistical data and the actual studies. As a result, the authors have posed a question: Why are entrepreneurs resistant to e-tools? In order to answer this question, the authors have addressed the Technology Acceptance Model (TAM). The authors analyzed each phase and determined several factors affecting the use of e-environment, reaching the main conclusion that entrepreneurs do not have a sufficient level of e-literacy (digital literacy).

Abstract: The European countries that during the past two
decades based their exchange rate regimes on currency board
arrangement (CBA) are usually analysed from the perspective of
corner solution choice’s stabilisation effects. There is an open
discussion on the positive and negative background of a strict
exchange rate regime choice, although it should be seen as part of the
transition process towards the monetary union membership. The
focus of the paper is on the Baltic countries that after two decades of
a rigid exchange rate arrangement and strongly influenced by global
crisis are finishing their path towards the euro zone. Besides the
stabilising capacity, the CBA is highly vulnerable regime, with
limited developing potential. The rigidity of the exchange rate (and
monetary) system, despite the ensured credibility, do not leave
enough (or any) space for the adjustment and/or active crisis
management. Still, the Baltics are in a process of recovery, with fiscal
consolidation measures combined with (painful and politically
unpopular) measures of internal devaluation. Today, two of them
(Estonia and Latvia) are members of euro zone, fulfilling their
ultimate transition targets, but de facto exchanging one fixed regime
with another.
The paper analyses the challenges for the CBA in unstable
environment since the fixed regimes rely on imported stability and
are sensitive to external shocks. With limited monetary instruments,
these countries were oriented to the fiscal policies and used a
combination of internal devaluation and tax policy measures. Despite
their rather quick recovery, our second goal is to analyse the long
term influence that the measures had on the national economy.
Abstract: The main problem is that there is a very low innovation performance in Latvia. Since Latvia is a Member State of European Union, it also shall have to fulfill the set targets and to improve innovative results.Universities are one of the main performers to provide innovative capacity of country. University, industry and government need to cooperate for getting best results.The intellectual property is one of the indicators to determine innovation level in the country or organization, and patents are one of the characteristics of intellectual property.The objective of the article is to determine indicators characterizing innovative environment in Latvia and influence of the development of universities on them.The methods that will be used in the article to achieve the objectives are quantitative and qualitative analysis of the literature, statistical data analysis and graphical analysis methods.
Abstract: Tolerance is a tool for achieving a social cohesion, particularly, among individuals and groups with different values. The aim is to study the characteristics of the ethnic tolerance, the inhabitants of Latvia. The ethnic tolerance is taught as a set of conscious and unconscious orientations of the individual in social interaction and inter-ethnic communication. It uses the tools of empirical studies of the ethnic tolerance which allows to identify the explicitly and implicitly levels of the emotional component of Latvia's residents. Explicit measurements were made using the techniques of self-report which revealed the index of the ethnic tolerance and the ethnic identity of the participants. The implicit component was studied using methods based on the effect of the emotional priming. During the processing of the results, there were calculated indicators of the positive and negative implicit attitudes towards members of their own and other ethnicity as well as the explicit parameters of the ethnic tolerance and the ethnic identity of Latvia-s residents. The implicit measurements of the ratio of neighboring ethnic groups against each other showed a mutual negative attitude whereas the explicit measurements indicate a neutral attitude. The data obtained contribute to a further study of the ethnic tolerance of Latvia's residents.
