Abstract: This study aims to determine the natural radioactivity levels in some foodstuffs produced in Turkey. For this purpose, 48 different foods samples were collected from different land parcels throughout the country. All samples were analyzed to designate both gross alpha and gross beta radioactivities and the radionuclides’ concentrations. The gross alpha radioactivities were measured as below 1 Bq kg-1 in most of the samples, some of them being due to the detection limit of the counting system. The gross beta radioactivity levels ranged from 1.8 Bq kg-1 to 453 Bq kg-1, larger levels being observed in leguminous seeds while the highest level being in haricot bean. The concentrations of natural radionuclides in the foodstuffs were investigated by the method of gamma spectroscopy. High levels of 40K were measured in all the samples, the highest activities being again in leguminous seeds. Low concentrations of 238U and 226Ra were found in some of the samples, which are comparable to the reported results in the literature. Based on the activity concentrations obtained in this study, average annual effective dose equivalents for the radionuclides 226Ra, 238U, and 40K were calculated as 77.416 µSv y-1, 0.978 µSv y-1, and 140.55 µSv y-1, respectively.
Abstract: Microalgae are tiny photosynthetic plants. Nowadays, microalgae are being used as nutrient-dense foods and sources of fine chemicals. They have significant amounts of lipid, carotenoids, vitamins, protein, minerals, chlorophyll, and pigments. Oil extraction from algae is a hotly debated topic currently because introducing an efficient method could decrease the process cost. This can determine the sustainability of algae-based foods. Scientific research works show that solvent extraction using chloroform/methanol (2:1) mixture is one of the efficient methods for oil extraction from algal cells, but both methanol and chloroform are toxic solvents, and therefore, the extracted oil will not be suitable for food application. In this paper, the effect of two food grade solvents (hexane and hexane/ isopropanol) on oil extraction yield from microalgae Dunaliella sp. was investigated and the results were compared with chloroform/methanol (2:1) extraction yield. It was observed that the oil extraction yield using hexane, hexane/isopropanol (3:2) and chloroform/methanol (2:1) mixture were 5.4, 13.93, and 17.5 (% w/w, dry basis), respectively. The fatty acid profile derived from GC illustrated that the palmitic (36.62%), oleic (18.62%), and stearic acids (19.08%) form the main portion of fatty acid composition of microalgae Dunalliela sp. oil. It was concluded that, the addition of isopropanol as polar solvent could increase the extraction yield significantly. Isopropanol solves cell wall phospholipids and enhances the release of intercellular lipids, which improves accessing of hexane to fatty acids.

Abstract: Tartrazine is an organic azo dyes food additive widely used in foods, drugs, and cosmetics. The present study aimed to investigate the toxic effects of tartrazine on kidneys and liver biomarkers in addition to the investigation of oxidative stress and change of histopathological structure of liver and kidneys in 30 male rats. Tartrazine was orally administrated daily at dose 200 mg/ kg bw (1/ 10 LD50) for sixty days. Serum and tissue samples were collected at the end of the experiment to investigate the underlying mechanism of tartrazine through assessment oxidative stress (Glutathione (GSH), Superoxide dismutase (SOD) and malondialdehyde (MDA) and biochemical markers (alanine aminotransferase (ALT), aspartate aminotransferase (AST), Total protein and Urea). Liver and kidneys tissue were collected and preserved in 10% formalin for histopathological examination. The obtained values were statistically analyzed by one way analysis of variance (ANOVA) followed by multiple comparison test. Biochemical analysis revealed that tartrazine induced significant increase in serum ALT, AST, total protein, urea level compared to control group. Tartrazine showed significant decrease in liver GSH and SOD where their values when compared to control group. Tartrazine induced increase in liver MDA compared to control group. Histopathology of the liver showed diffuse vacuolar degeneration in hepatic parenchyma, the portal area showed sever changes sever in hepatoportal blood vessels and in the bile ducts. The kidneys showed degenerated tubules at the cortex together with mononuclear leucocytes inflammatory cells infiltration. There is perivascular edema with inflammatory cell infiltration surrounding the congested and hyalinized vascular wall of blood vessel. The present study indicates that the subchronic effects of tartrazine have a toxic effect on the liver and kidneys together with induction of oxidative stress by formation of free radicals. Therefore, people should avoid the hazards of consuming tartrazine.
Abstract: The objective of this study was to assess the production and market of certified organic products in Thailand. A purposive sampling technique was used to identify a sample group of 154 organic entrepreneurs for the study. A survey and in-depth interview were employed for data collection. Also, secondary data from organic agriculture certification body and publications was collected. Then descriptive statistics and content analysis technique were used to describe about production and market of certified organic products in Thailand. Results showed that there were 9,218 farmers on 213,183.68 Rai (83,309.2 acre) of certified organic agriculture land (0.29% of national agriculture land). A total of 57.8% of certified organic agricultural lands were certified by the international certification body. Organic farmers produced around 71,847 tons/year and worth around THB 1,914 million (Euro 47.92 million). Excluding primary producers, 471 operators involved in the Thai organic supply chains, including processors, exporters, distributors, green shops, modern trade shops (supermarket shop), farmer’s markets and food establishments were included. Export market was the major market channel and most of organic products were exported to Europe and North America. The total Thai organic market in 2014 was estimated to be worth around THB 2,331.55 million (Euro 58.22 million), of which, 77.9% was for export and 22.06% was for the domestic market. The largest exports of certified organic products were processed foods (66.1% of total export value), followed by organic rice (30.4%). In the domestic market, modern trade was the largest sale channel, accounting for 59.48% of total domestic sales, followed by green shop (29.47%) and food establishment (5.85%). To become a center of organic farming and trading within ASEAN, the Thai organic sector needs to have more policy support in regard to agricultural chemicals, GMO, and community land title. In addition, appropriate strategies need to be developed.
Abstract: In 2013 and 2014, the U.S. Food and Drug Administration (FDA) collected data from selected fast food restaurants and full service restaurants for tracking changes in the occurrence of foodborne illness risk factors. This paper discussed how we customized spatial random sampling method by considering financial position and availability of FDA resources, and how we enriched restaurants data with location. Location information of restaurants provides opportunity for quantitatively determining random sampling within non-government units (e.g.: 240 kilometers around each data-collector). Spatial analysis also could optimize data-collectors’ work plans and resource allocation. Spatial analytic and processing platform helped us handling the spatial random sampling challenges. Our method fits in FDA’s ability to pinpoint features of foodservice establishments, and reduced both time and expense on data collection.
Abstract: In recent years, focus-group discussions, as a resources of qualitative facts collection, have gained popularity amongst practices within social science studies. Despite this popularity, studying qualitative information, particularly focus-group meetings, creates a challenge to most practitioner inspectors. The Mons, also known as Raman is considered to be one of the earliest peoples in mainland South-East Asia and to be found in scattered communities in Thailand, around the central valley and even in Bangkok. The present project responds to the needs identified traditional Mon set menus based on the participation of Bang Kadi community in Bangkok, Thailand. The aim of this study was to generate Mon food set menus based on the participation of the community and to study Mon food in set menus of Bang Kadi population by focus-group interviews and discussions during May to October 2015 of Bang Kadi community in Bangkok, Thailand. Data were collected using (1) focus group discussion between the researcher and 147 people in the community, including community leaders, women of the community and the elderly of the community (2) cooking between the researcher and 22 residents of the community. After the focus group discussion, the results found that Mon set menus of Bang Kadi residents involved of Kang Neng Kua-dit, Kang Luk-yom, Kang Som-Kajaeb, Kangleng Puk-pung, Yum Cha-cam, Pik-pa, Kao-new dek-ha and Num Ma-toom and the ingredients used in cooking are mainly found in local and seasonal regime. Most of foods in set menus are consequent from local wisdom.
Abstract: Background: The 2004 World Health Assembly called for specific actions to halt the overweight and obesity epidemic that is currently penetrating urban populations in the developing world. Adolescents require particular attention due to their vulnerability to develop obesity and the fact that adolescent weight tracks strongly into adulthood. However, there is scarcity of information on the modifiable risk factors to be targeted for primary intervention among urban adolescents in Ethiopia. This study was aimed at determining the magnitude and risk factors of overweight and obesity among high school adolescents in Addis Ababa. Methods: An institution-based cross-sectional study was conducted in February and March 2014 on 456 randomly selected adolescents from 20 high schools in Addis Ababa city. Demographic data and other risk factors of overweight and obesity were collected using self-administered structured questionnaire, whereas anthropometric measurements of weight and height were taken using calibrated equipment and standardized techniques. The WHO STEPS instrument for chronic disease risk was applied to assess dietary habit and physical activity. Overweight and obesity status was determined based on BMI-for-age percentiles of WHO 2007 reference population. Results: The prevalence rates of overweight, obesity, and overall overweight/ obesity among high school adolescents in Addis Ababa were 9.7% (95%CI = 6.9-12.4%), 4.2% (95%CI = 2.3-6.0%), and 13.9% (95%CI = 10.6-17.1%), respectively. Overweight/obesity prevalence was highest among female adolescents, in private schools, and in the higher wealth category. In multivariable regression model, being female [AOR(95%CI) = 5.4(2.5,12.1)], being from private school [AOR(95%CI) = 3.0(1.4,6.2)], having >3 regular meals [AOR(95%CI) = 4.0(1.3,13.0)], consumption of sweet foods [AOR(95%CI) = 5.0(2.4,10.3)] and spending >3 hours/day sitting [AOR(95%CI) = 3.5(1.7,7.2)] were found to increase overweight/ obesity risk, whereas high Total Physical Activity level [AOR(95%CI) = 0.21(0.08,0.57)] and better nutrition knowledge [AOR(95%CI) = 0.160.07,0.37)] were found protective. Conclusions: More than one in ten of the high school adolescents were affected by overweight/obesity with dietary habit and physical activity are important modifiable risk factors. Well-tailored nutrition education program targeting lifestyle change should be initiated with more emphasis to female adolescents and students in private schools.
Abstract: Pomace, a by-product from fruit processing industry is the potential source of valuable bioactive. Cookies are popular, ready to eat and low price foods; therefore, enrichment of these products is of great importance. In this work, bioactive compounds extracted from cherry pomace, encapsulated in soy and whey proteins, have been incorporated in cookies, replacing 10 (SP10 and WP10) and 15% of wheat flour (SP15 and WP15). Cookie geometry (diameter (D), thickness (T) and spread ratio (D/T)), cookie weight, cookie hardness and cookie surface colour were measured. Sensory characteristics are also examined. The results show that encapsulated cherry pomace bioactives have positively influenced the cookie mass. Diameter, redness (a* value) and cookie hardness increased. Sensory evaluation of cookies, revealed that up to 15% substitution of wheat flour with WP encapsulate produced acceptable cookies similar to the control (100% wheat flour) cookies.
Abstract: The aim of this study is to present the results of a retrospective survey on the foreign matter found in foods analyzed at the Adolfo Lutz Institute, from July 2001 to July 2015. All the analyses were conducted according to the official methods described on Association of Official Agricultural Chemists (AOAC) for the micro analytical procedures and Food and Drug Administration (FDA) for the macro analytical procedures. The results showed flours, cereals and derivatives such as baking and pasta products were the types of food where foreign matters were found more frequently followed by condiments and teas. Fragments of stored grains insects, its larvae, nets, excrement, dead mites and rodent excrement were the most foreign matter found in food. Besides, foreign matters that can cause a physical risk to the consumer’s health such as metal, stones, glass, wood were found but rarely. Miscellaneous (shell, sand, dirt and seeds) were also reported. There are a lot of extraneous materials that are considered unavoidable since are something inherent to the product itself, such as insect fragments in grains. In contrast, there are avoidable extraneous materials that are less tolerated because it is preventable with the Good Manufacturing Practice. The conclusion of this work is that although most extraneous materials found in food are considered unavoidable it is necessary to keep the Good Manufacturing Practice throughout the food processing as well as maintaining a constant surveillance of the production process in order to avoid accidents that may lead to occurrence of these extraneous materials in food.
Abstract: The question of legal liability over injury arising out
of the import and the introduction of GM food emerges as a crucial
issue confronting to promote GM food and its derivatives. There is a
greater possibility of commercialized GM food from the exporting
country to enter importing country where status of approval shall not
be same. This necessitates the importance of fixing a liability
mechanism to discuss the damage, if any, occurs at the level of
transboundary movement or at the market. There was a widespread consensus to develop the Cartagena
Protocol on Biosafety and to give for a dedicated regime on liability
and redress in the form of Nagoya Kuala Lumpur Supplementary
Protocol on the Liability and Redress (‘N-KL Protocol’) at the
international context. The national legal frameworks based on this
protocol are not adequately established in the prevailing food
legislations of the developing countries. The developing economy
like India is willing to import GM food and its derivatives after the
successful commercialization of Bt Cotton in 2002. As a party to the
N-KL Protocol, it is indispensable for India to formulate a legal
framework and to discuss safety, liability, and regulatory issues
surrounding GM foods in conformity to the provisions of the
Protocol. The liability mechanism is also important in the case where
the risk assessment and risk management is still in implementing
stage. Moreover, the country is facing GM infiltration issues with its
neighbors Bangladesh. As a precautionary approach, there is a need
to formulate rules and procedure of legal liability to discuss any kind
of damage occurs at transboundary trade. In this context, the
proposed work will attempt to analyze the liability regime in the
existing Food Safety and Standards Act, 2006 from the applicability
and domestic compliance and to suggest legal and policy options for
regulatory authorities.
Abstract: Lead being a toxic heavy metal that mankind is
exposed to the highest levels of this metal. There are different sources
of environmental pollution with lead as lead alkyl additives in petrol
and manufacturing processes. The contaminated atmosphere in urban
and industrial areas by lead in Egypt may lead to the contamination
of foods beside the other different sources. The present investigation
studied the risk assessment of lead in some Egyptian edible
vegetables and fruits collected from different environments in Greater
Cairo Governorate, i.e. industrial, heavy traffic and rural areas. A
total of 325 leafy and fruity vegetables and fruits samples belonging
to 11, 6 and 4 different species, respectively were randomly collected
from markets of the three main models. Data indicated the variation
of lead levels in different three areas. The highest levels of lead were
detected in the samples collected from industrial and traffic areas.
However, the lowest levels were found in the rural areas. It could be
concluded that determination of lead levels in foods from different
localities and environments at regularly is very important.
Abstract: Frozen shrimp industry plays an important role in the
development of production industry of the country. There has been a
continuing development to response the increasing demand; however,
there have been some problems in running the enterprises. The
purposes of this study are to: 1) investigate problems related to basic
factors in operating frozen shrimp industry based on the
entrepreneurs’ points of view. The enterprises involved in this study
were small and medium industry receiving Thai Frozen Foods
Association. 2) Compare the problems of the frozen shrimp industry
according to their sizes of operation in 3 provinces of the central
region Thailand. Population in this study consisted of 148 managers
from 148 frozen shrimp enterprises Thai Frozen Foods Association
which 77 were small size and 71 were medium size. The data were
analyzed to find percentage, arithmetic mean, standard deviation, and
independent sample T-test with the significant hypothesis at .05. The
results revealed that the problems of the frozen shrimp industries of
both size were in high level. The needs for government supporting
were in high level. The comparison of the problems and the basic
factors between the small and medium size enterprises showed no
statistically significant level. The problems that they mentioned
included raw materials, labors, production, marketing, and the need
for academic supporting from the government sector.
Abstract: Diets high in processed foods have been found to lack
essential micro-nutrients for optimum human development and
overall health. Some micro-nutrients such as copper (Cu) have been
found to enhance the inflammatory response through its oxidative
functions, thereby having a role in cardiovascular disease, metabolic
syndrome, diabetes and related complications. This research study
was designed to determine if food crops could be bio-fortified with
micro-nutrients by growing sprouts on mineral fortified fiber mats. In
the feasibility study described in this contribution, recycled cellulose
fibers and clay, saturated with either micro-nutrient copper ions or
copper nanoparticles, were converted to a novel mineral-cellulose
fiber carrier of essential micro-nutrient and of antimicrobial
properties. Seeds of Medicago sativa (alfalfa), purchased from a
commercial, organic supplier were germinated on engineered
cellulose fiber mats. After the appearance of the first leaves, the
sprouts were dehydrated and analyzed for Cu content. Nutrient
analysis showed ~2 increase in Cu of the sprouts grown on the fiber
mats with copper particles, and ~4 increase on mats with ionic copper
as compared to the control samples. This study illustrates the
potential for the use of engineered mats as a viable way to increase
the micro-nutrient composition of locally-grown food crops and the
need for additional research to determine the uptake, nutritional
implications and risks of micro-nutrient bio-fortification.
Abstract: Lyophilization, also called freeze-drying, is an
important dehydration technique mainly used for pharmaceuticals.
Food industry also uses lyophilization when it is important to retain
most of the nutritional quality, taste, shape and size of dried products
and to extend their shelf life. Vacuum-Induced during freezing cycle
(VI) has been used in order to control ice nucleation and,
consequently, to reduce the time of primary drying cycle of
pharmaceuticals preserving quality properties of the final product.
This procedure has not been applied in freeze drying of foods. The
present work aims to investigate the effect of VI on the lyophilization
drying time, final moisture content, density and reconstitutional
properties of mango (Mangifera indica L.) slices (MS) and mango
pulp-maltodextrin dispersions (MPM) (30% concentration of total
solids). Control samples were run at each freezing rate without using
induced vacuum. The lyophilization endpoint was the same for all
treatments (constant difference between capacitance and Pirani
vacuum gauges). From the experimental results it can be concluded
that at the high freezing rate (0.4°C/min) reduced the overall process
time up to 30% comparing process time required for the control and
VI of the lower freeze rate (0.1°C/min) without affecting the quality
characteristics of the dried product, which yields a reduction in costs
and energy consumption for MS and MPM freeze drying. Controls
and samples treated with VI at freezing rate of 0.4°C/min in MS
showed similar results in moisture and density parameters.
Furthermore, results from MPM dispersion showed favorable values
when VI was applied because dried product with low moisture
content and low density was obtained at shorter process time
compared with the control. There were not found significant
differences between reconstitutional properties (rehydration for MS
and solubility for MPM) of freeze dried mango resulting from
controls, and VI treatments.
Abstract: The growing concerns for physical wellbeing and
health have been reflected in the way we choose food in our table.
Nowadays, we are all more informed consumers and choose healthier
foods. On the other hand, stroke, cancer and atherosclerosis may be
somehow minimized by the intake of some bioactive compounds
present in food, the so-called nutraceuticals and functional foods. The
aim of this work was to make a revision of the published studies
about the effects of some bioactive compounds, namely lycopene in
human health, in the prevention of diseases, thus playing the role of a
functional food. Free radical in human body can induce cell damage
and consequently can be responsible for the development of some
cancers and chronic diseases. Lycopene is one of the most powerful
antioxidants known, being the predominant carotenoid in tomato. The
respective chemistry, bioavailability, and its functional role in the
prevention of several diseases will be object of this work. On the
other hand, the inclusion of lycopene in some foods can also be made
by biotechnology and represents a way to recover the wastes in the
tomato industry with nutritional positive effects in health.
Abstract: Grains, including oats (Avena sativa L.), have been
recognized functional foods, because provide beneficial effect on the
health of the consumer and decrease the risk of various diseases. Oats
are good source of soluble fibre, essential amino acids, unsaturated
fatty acids, vitamins and minerals. Oat breeders have developed oat
varieties and improved yielding ability potential of oat varieties.
Therefore, the aim of investigation was to analyze the composition of
perspective oat varieties and breeding lines grains grown in different
conditions and evaluate functional properties. In the studied samples
content of protein, starch, β-glucans, total dietetic fibre, composition
of amino acids and vitamin E were determined. The results of
analysis showed that protein content depending of varieties ranged
9.70% to 17.30% total dietary fibre 13.66 g100g-1 to 30.17 g100g-1,
content of β-glucans 2.7 g100g-1 to 3.5 g100g-1, amount of
vitamin E (α-tocopherol) determined from 4 mgkg-1 to 9.9 mgkg-1.
The sums of essential amino acids in oat grain samples were
determined from 31.63 gkg-1 to 54.90 gkg-1. It is concluded that
amino acids composition of husked and naked oats grown in organic
or conventional conditions is close to optimal for human health.
Abstract: Toddy sediment (TS) was cultured in a PDA medium
to determine initial yeast load, and also it was undergone sun, shade,
solar, dehumidified cold air (DCA) and hot air oven (at 400, 500 and
60oC) drying with a view to preserve viability of yeast. Thereafter,
this study was conducted according to two factor factorial design in
order to determine best preservation method. Therein the dried TS
from the best drying method was taken and divided into two portions.
One portion was mixed with 3: 7 ratio of TS: rice flour and the
mixture was divided in to two again. While one portion was kept
under in house condition the other was in a refrigerator. Same
procedure was followed to the rest portion of TS too but it was at the
same ratio of corn flour. All treatments were vacuum packed in triple
laminate pouches and the best preservation method was determined
in terms of leavening index (LI). The TS obtained from the best
preservation method was used to make foods (bread and hopper) and
organoleptic properties of it were evaluated against same of ordinary
foods using sensory panel with a five point hedonic scale.
Results revealed that yeast load or fresh TS was 58×106 CFU/g.
The best drying method in preserving viability of yeast was DCA
because LI of this treatment (96%) is higher than that of other three
treatments. Organoleptic properties of foods prepared from best
preservation method are as same as ordinary foods according to Duo
trio test.
Abstract: Livestock is one of the fastest-growing sectors in
agriculture. If carefully managed, have potential opportunities for
economic growth, food sovereignty and food security. In this study
we mainly analyse and compare long-term i.e. for year 2030 climate
variability impact on predicted productivity of meat i.e. beef, mutton
and poultry for the Kingdom of Saudi Arabia w.r.t three factors i.e. i)
climatic-change vulnerability ii) CO2 fertilization and iii) water
scarcity and compare the results with two countries of the region i.e.
Iraq and Yemen. We do the analysis using data from diverse sources,
which was extracted, transformed and integrated before usage. The
collective impact of the three factors had an overall negative effect on
the production of meat for all the three countries, with adverse impact
on Iraq. High similarity was found between CO2 fertilization
(effecting animal fodder) and water scarcity i.e. higher than that
between production of beef and mutton for the three countries
considered. Overall, the three factors do not seem to be favorable for
the three Middle-East countries considered. This points to possibility
of a vegetarian year 2030 based on dependency on indigenous livestock
population.
Abstract: Science and technology has a major impact on many
societal domains such as communication, medicine, food,
transportation, etc. However, this dominance of modern technology
can have a negative unintended impact on indigenous systems, and in
particular on indigenous foods. This problem serves as a motivation
to this study whose aim is to examine the perceptions of learners on
the usefulness of Information and Communication Technologies
(ICTs) for learning about indigenous foods. This aim will be
subdivided into two types of research objectives. The design and
identification of theories and models will be achieved using literature
content analysis. The objective on the empirical testing of such
theories and models will be achieved through the survey of
Hospitality studies learners from different schools in the iLembe and
Umgungundlovu Districts of the South African Kwazulu-Natal
province. SPSS is used to quantitatively analyze the data collected by
the questionnaire of this survey using descriptive statistics and
Pearson correlations after the assessment of the validity and the
reliability of the data. The main hypothesis behind this study is that
there is a connection between the demographics of learners, their
perceptions on the usefulness of ICTs for learning about indigenous
foods, and the following personality and eLearning related theories
constructs: Computer self-efficacy, Trust in ICT systems, and
Conscientiousness; as suggested by existing studies on learning
theories. This hypothesis was fully confirmed by the survey
conducted by this study except for the demographic factors where
gender and age were not found to be determinant factors of learners’
perceptions on the usefulness of ICTs for learning about indigenous
foods.
