Abstract: Cantaloupes (muskmelon and watermelon) contain biologically active molecules such as carotenoids which are natural pigments used as food colorants and afford health benefits. ß-carotene is the major source of carotenoids present in muskmelon and watermelon shell. Carotenoids were extracted using Microwave assisted extraction (MAE) and Ultrasound assisted extraction (UAE) utilising organic lipophilic solvents such as acetone, methanol, and hexane. Extraction conditions feed-solvent ratio, microwave power, ultrasound frequency, temperature and particle size were varied and optimized. It was found that the yield of carotenoids was higher using UAE than MAE, and muskmelon had the highest yield of carotenoids when was ethanol used as a solvent for 0.5 mm particle size.
Abstract: In this study, 3 species of Dunaliella (Dunaliella sp. Salt Lake isoalte (Tuz Gölü), Dunaliella salina CCAP19/18, and Dunaliella bardawil LB 2538) and their optical density, dry matter, chlorophyll a, total carotenoids, and β-carotene production were investigated in a batch system. The aim of this research was to compare carotenoids, and β-carotene production were investigated in a batch those 3 species. Therefore 2 stress factors were used: 2 different temperatures (20°C and 30°C) and 2 different salinities (30‰, and 60‰) were tested over a 17-day study. Abstract: Egg yolk oil is a concentrated source of egg bioactive compounds, such as fat-soluble vitamins, phospholipids, cholesterol, carotenoids and others. To extract lipids and other fat-soluble nutrients from liquid egg yolk, a two-step extraction process involving polar (ethanol) and non-polar (hexane) solvents were used. This extraction technique was based on egg yolk bioactive compounds polarities, where non-polar compound was extracted into non-polar hexane, but polar in to polar alcohol/water phase. But many egg yolk bioactive compounds are not strongly polar or non-polar. Egg yolk phospholipids, cholesterol and pigments are amphipatic (have both polar and non-polar regions) and their behavior in ethanol/hexane solvent system is not clear. The aim of this study was to clarify the behavior of phospholipids, cholesterol and carotenoids during extraction of egg yolk oil with ethanol and hexane and determine the loss of these compounds in egg yolk oil. Egg yolks and egg yolk oil were analyzed for phospholipids (phosphatidylcholine (PC) and phosphatidylethanolamine (PE)), cholesterol and carotenoids (lutein, zeaxanthin, canthaxanthin and β-carotene) content using GC-FID and HPLC methods. PC and PE are polar lipids and were extracted into polar ethanol phase. Concentration of PC in ethanol was 97.89% and PE 99.81% from total egg yolk phospholipids. Due to cholesterol’s partial extraction into ethanol, cholesterol content in egg yolk oil was reduced in comparison to its total content presented in egg yolk lipids. The highest amount of lutein and zeaxanthin was concentrated in ethanol extract. The opposite situation was observed with canthaxanthin and β-carotene, which became the main pigments of egg yolk oil.
Abstract: Microalgae are tiny photosynthetic plants. Nowadays, microalgae are being used as nutrient-dense foods and sources of fine chemicals. They have significant amounts of lipid, carotenoids, vitamins, protein, minerals, chlorophyll, and pigments. Oil extraction from algae is a hotly debated topic currently because introducing an efficient method could decrease the process cost. This can determine the sustainability of algae-based foods. Scientific research works show that solvent extraction using chloroform/methanol (2:1) mixture is one of the efficient methods for oil extraction from algal cells, but both methanol and chloroform are toxic solvents, and therefore, the extracted oil will not be suitable for food application. In this paper, the effect of two food grade solvents (hexane and hexane/ isopropanol) on oil extraction yield from microalgae Dunaliella sp. was investigated and the results were compared with chloroform/methanol (2:1) extraction yield. It was observed that the oil extraction yield using hexane, hexane/isopropanol (3:2) and chloroform/methanol (2:1) mixture were 5.4, 13.93, and 17.5 (% w/w, dry basis), respectively. The fatty acid profile derived from GC illustrated that the palmitic (36.62%), oleic (18.62%), and stearic acids (19.08%) form the main portion of fatty acid composition of microalgae Dunalliela sp. oil. It was concluded that, the addition of isopropanol as polar solvent could increase the extraction yield significantly. Isopropanol solves cell wall phospholipids and enhances the release of intercellular lipids, which improves accessing of hexane to fatty acids.
Abstract: Red pepper (Capsicum annum L.) has long been
recognized as a good source of antioxidants, being rich in ascorbic
acid and other phytochemicals. In Turkish cuisine red pepper is
sometimes consumed raw in salads and baked as a garnish, but its
most wide consumption type is red pepper paste. The processing of
red pepper into pepper paste includes various thermal treatment steps
such as heating and pasteurizing. There are reports demonstrating an
enhancement or reduction in antioxidant activity of vegetables after
thermal treatment. So this study was conducted to investigate the
total phenolic, ascorbic acid and total carotenoids as well as free
radical scavenging activity of raw red pepper and various red pepper
pastes obtainable on the market. The samples were analyzed for
radical-scavenging activity (RSA) and total polyphenol (TP) content
using 1,1-diphenyl-2-picrylhydrazyl (DPPH) and Folin-Ciocalteu
methods, respectively. Total carotenoids and ascorbic acid contents
were determined spectrophotometrically. Results suggest that hot
pepper paste contained significantly (P0.05) difference in RSA, ascorbic acid and total carotenoids
content between sweet and hot red pepper paste products. It is
concluded that the red pepper paste, that has a wide range of
consumption in Turkish cuisine, presents a good dose of phenolic
compounds and antioxidant capacity and it should be regarded as a
functional food.
Abstract: The growing concerns for physical wellbeing and
health have been reflected in the way we choose food in our table.
Nowadays, we are all more informed consumers and choose healthier
foods. On the other hand, stroke, cancer and atherosclerosis may be
somehow minimized by the intake of some bioactive compounds
present in food, the so-called nutraceuticals and functional foods. The
aim of this work was to make a revision of the published studies
about the effects of some bioactive compounds, namely lycopene in
human health, in the prevention of diseases, thus playing the role of a
functional food. Free radical in human body can induce cell damage
and consequently can be responsible for the development of some
cancers and chronic diseases. Lycopene is one of the most powerful
antioxidants known, being the predominant carotenoid in tomato. The
respective chemistry, bioavailability, and its functional role in the
prevention of several diseases will be object of this work. On the
other hand, the inclusion of lycopene in some foods can also be made
by biotechnology and represents a way to recover the wastes in the
tomato industry with nutritional positive effects in health.
Abstract: Antioxidants are became the most analyzed substances in last decades. Antioxidants act as in activator for free radicals. Spices and vegetables are one of major antioxidant sources. Most common antioxidants in vegetables and spices are vitamin C, E, phenolic compounds, carotenoids. Therefore, it is important to get some view about antioxidant changes in spices and vegetables during processing. In this article was analyzed nine fresh and dried spices and vegetables- celery (Apium graveolens), parsley (Petroselinum crispum), dill (Anethum graveolens), leek (Allium ampeloprasum L.), garlic (Allium sativum L.), onion (Allium cepa), celery root (Apium graveolens var. rapaceum), pumpkin (Curcubica maxima), carrot (Daucus carota)- grown in Latvia 2013. Total carotenoids and phenolic compounds and their antiradical scavenging activity were determined for all samples. Dry matter content was calculated from moisture content. After drying process carotenoid content significantly decreases in all analyzed samples, except one -carotenoid content increases in parsley. Phenolic composition was different and depends on sample – fresh or dried. Total phenolic, flavonoid and phenolic acid content increases in dried spices. Flavan-3-ol content is not detected in fresh spice samples. For dried vegetables- phenolic acid content decreases significantly, but increases flavan-3-ols content. The higher antiradical scavenging activity was observed in samples with higher flavonoid and phenolic acid content.
Abstract: This study was conducted to evaluate the response of almond genotypes to osmotic stress in vitro in order to screen drought tolerance. Explants subjected to polyethyleneglycol osmotic stress (0, 3.5, and 7.0% WV) on the MS medium. Concentrations of photosynthesis pigments, anthocyanins, and carothenoids were significantly reduced under osmotic stress. Under osmotic stress, leaf water content, cellular membrane stability and pigments concentrations were significantly higher in the leaves of drought tolerant genotypes. The results revealed that carotenoids and anthocyanins may act as photoprotectant compounds in almond leaves and involved in drought tolerance system of the plant.
Abstract: Dried tomato peel (DTP) was tested in vivo (n=10) in 42 week-old laying hens at rates of 0, 40, 70, 100 and 130g/kg DM feed. Laying hens were fed in group 120 g DM/day/animal for 26 days. After 21 days, feed intake was not affected after DTP incorporation (97% of the offered feed in the five groups). Laying rate was not significantly different after DTP incorporation at 4 and 10% from the control group. Egg yolk resulting from DTP-enriched diets, contained lower amounts of cholesterol (14 to 17mg/g) and triglyceride (188mg/g) compared to the control group (22 and 241 mg/g, respectively) (P
Abstract: Potatoes are a good source of carotenoids, which are lipophilic compounds synthesized in plastids from isoprenoids. The aim of this research was to determine the content of carotenoids in relationship with the colour of organically and conventionally cultivated potato genotypes before and after period of storage. In cooperation with the State Priekuli Plant Breeding Institute (Latvia), six potato genotypes were studied: 'Agrie dzeltenie', 'Prelma', 'Imanta', 'S-03135-10', 'S-99108-8' and 'S-01063-5'. All the genotypes were cultivated under three different conditions: organically and conventionally (two conditions). The content of carotenoids was determined by using spectrophotometer and the colour – L*a*b* system. The results of current research show that after the period of storage, carotenoid amount has increased and in conventionally cultivated potatoes it varies from 228.514 to 552.434 μg 100 g-1 while in organically cultivated potato genotypes – from 45.485 to 662.699 μg 100 g-1 FW. Colour of potato flesh was changing during storage.
Abstract: In this research, natural canthaxanthin as one of the
most important carotenoids was extracted from Dietzia
natronolimnaea HS-1. The changes of canthaxanthin enriched in oilin-
water emulsions with vegetable oil (5 mg/ 100 mL), Arabic gum (5
mg/100 mL), and potassium sorbate (0.5 g/100 mL) was investigated.
The effects of different pH (3, 5 and 7), as well as, time treatment (3,
18 and 33 days) in the environmental temperature (24°C) on the
degradation were studied by response surface methodology (RSM).

Abstract: Ipomoea batatas (Sweetpotato) is currently ranked
sixth in the total world food production and are planted mainly for
their storage roots. The present study was undertaken to evaluate and
compare the antioxidant properties of the leaf and carotenoids extract
from the Ipomoea batatas var. Oren leaves. Total flavonoids in the
leaf extract was 144.6 ± 40.5 μg/g compared to 114.86 ± 4.35 μg/g
catechin equivalent in the carotenoids extract. Total polyphenols in
the leaf extracts (3.470 ± 0.024 GAE g/100g DW) was slightly higher
compared to carotenoids extract (2.994 ± 0.078 GAE g/100g DW).
The carotenoids extract marked a higher radical scavenging capacity
with the IC50= 491.86 μg/ml compared to leaf extract (IC50= 545.39
μg/ml). Concentration-dependent reducing activity was observed for
both extracts. Thus, the carotenoids extraction process retained most
of the antioxidant capacity from the leaves and can be made into
potential natural yellow dye with antioxidant property.
Abstract: Tomato nutrition value, color, flavor of their fruits and products depends mainly on lycopene, β-carotene, ascorbic acid, sugars and their ratio. The two most important carotenoids in fruits of tomato are lycopene, which determined fruits red color, and β- carotene, which accounts for approximately 7% of the tomato carotenoids. Therefore, tomato products and their quality can be well characterized by the content of these elements.Maturity at harvest is very important to composition and quality of tomatoes. This is especially a problem with tomatoes picked green since it is difficult to differentiate between mature and immature-green fruits. Typical and advanced mature-green tomatoes will usually attain a much better flavor than those picked at the immature or partially mature stages.To better understand the synthesis of biochemical compounds, their concentration should be compared not only at the last stage of maturity, but also during all fruit ripening period in different varieties.
Abstract: To evaluate genetic variation of wheat (Triticum aestivum) affected by heat and drought stress on eight Australian wheat genotypes that are parents of Doubled Haploid (HD) mapping populations at the vegetative stage, the water stress experiment was conducted at 65% field capacity in growth room. Heat stress experiment was conducted in the research field under irrigation over summer. Result show that water stress decreased dry shoot weight and RWC but increased osmolarity and means of Fv/Fm values in all varieties except for Krichauff. Krichauff and Kukri had the maximum RWC under drought stress. Trident variety was shown maximum WUE, osmolarity (610 mM/Kg), dry mater, quantum yield and Fv/Fm 0.815 under water stress condition. However, the recovery of quantum yield was apparent between 4 to 7 days after stress in all varieties. Nevertheless, increase in water stress after that lead to strong decrease in quantum yield. There was a genetic variation for leaf pigments content among varieties under heat stress. Heat stress decreased significantly the total chlorophyll content that measured by SPAD. Krichauff had maximum value of Anthocyanin content (2.978 A/g FW), chlorophyll a+b (2.001 mg/g FW) and chlorophyll a (1.502 mg/g FW). Maximum value of chlorophyll b (0.515 mg/g FW) and Carotenoids (0.234 mg/g FW) content belonged to Kukri. The quantum yield of all varieties decreased significantly, when the weather temperature increased from 28 ÔùªC to 36 ÔùªC during the 6 days. However, the recovery of quantum yield was apparent after 8th day in all varieties. The maximum decrease and recovery in quantum yield was observed in Krichauff. Drought and heat tolerant and moderately tolerant wheat genotypes were included Trident, Krichauff, Kukri and RAC875. Molineux, Berkut and Excalibur were clustered into most sensitive and moderately sensitive genotypes. Abstract: The present study was conducted to investigate the
response of plants exposed to lignite-based thermal power plant
emission. For this purpose, five plant species were collected from 1.0
km distance (polluted site) and control plants were collected from
20.0 km distance (control site) to thermal power plant. The common
tree species Cassia siamea Lamk., Polyalthia longifolia. Sonn,
Acacia longifolia (Andrews) Wild., Azadirachta indica A.Juss, Ficus
religiosa L. were selected as test plants. Photosynthetic pigments
changes (chlorophyll a, chlorophyll b and carotenoids) and rubisco
enzyme modifications were studied. Reduction was observed in the
photosynthetic pigments of plants growing in polluted site and also
large sub unit of the rubisco enzyme was degraded in Azadirachta
indica A. Juss collected from polluted site.
Abstract: Two cultivars ('Rutuliai', 'Saint Perrie') and five
hybrids ('Tolstoi', 'Brooklyn', 'Tocayo', 'Benito', 'Tourist') of edible
tomato (Lycopersicon esculentum Mill.) were investigated at the
LRCAF Institute of Horticulture. The following fruit quality
parameters were evaluated: the amount of lycopene, β-carotene,
ascorbic acid, total and inverted sugar, sucrose, dry matter soluble
solids in fresh tomato matter, also were determined fruit skin and
flesh firmness, color indexes (CIE L*a*b*) and calculated hue angle
(h°) with chroma (C).
Abstract: The aim of present experiment was to evaluate the
influence of cultivar to quality parameters of dried potato chips and
sticks produced in microwave-vacuum drier. The potatoes before
drying were blanched in oil and water at 180ºC and at 85ºC
respectively. The moisture content, crispiness, the colour (CIE
L*a*b*), the content of ascorbic acid, total carotenoids and total fat
content of dried potato chips and sticks was determined The highest
ascorbic acid content, high content of carotenoids, low total fat
content, low acrylamide content and good crispiness (low breaking
force) especially for sticks was determined in the samples of Gundega
cultivar.
Abstract: Experiments with pumpkin-rowanberry marmalade
candies were carried out at the Faculty of Food Technology of the
Latvia University of Agriculture. The objective of this investigation
was to evaluate the quality changes of pumpkin-rowanberry
marmalade candies packed in different packaging materials during
the storage of 15 weeks, and to find the most suitable packaging
material for prolongation of low sugar marmalade candies shelf-life.
An active packaging in combination with modified atmosphere
(MAP, CO2 100%) was examined and compared with traditional
packaging in air ambiance. Polymer Multibarrier 60 and paper bags
were used. Influence of iron based oxygen absorber in sachets of 500
cc obtained from Mitsubishi Gas Chemical Europe Ageless® on the
marmalade candies’ quality was tested during shelf life. Samples of
80±5 g were packaged in polymer pouches (110 mm x 110 mm),
hermetically sealed by MULTIVAC C300 vacuum chamber machine,
and stored in a room temperature +21±0.5 °C. The physiochemical
properties –moisture content, hardness, aw, pH, changes of
atmosphere content (CO2 and O2), ascorbic acid, total carotenoids,
total phenols in headspace of packs, and microbial conditions were
analysed before packaging and in the 1st, 3rd , 5th, 8th, 11th and 15th
weeks of storage.
Abstract: Lutein is a dietary oxycarotenoid which is found
to reduce the risks of Age-related Macular Degeneration
(AMD). Supercritical fluid extraction of lutein esters from
marigold petals was carried out and was found to be much
effective than conventional solvent extraction. The
saponification of pre-concentrated lutein esters to produce free
lutein was studied which showed a composition of about 88%
total carotenoids (UV-VIS spectrophotometry) and 90.7%
lutein (HPLC). The lipase catalyzed hydrolysis of lutein esters
in conventional medium was investigated. The optimal
temperature, pH, enzyme concentration and water activity
were found to be 50°C, 7, 15% and 0.33 respectively and the
activity loss of lipase was about 25% after 8 times re-use in at
50°C for 12 days. However, the lipase catalyzed hydrolysis of
lutein esters in conventional media resulted in poor
conversions (16.4%).
