Abstract: The influence of microwave drying methods on the nutritional and anti-nutritional composition and physical characteristics of banana peels was investigated. Banana peels were assessed for physical properties such as yield, pH value, bulk density, water holding capacity (WHC) and oil holding capacity (OHC). The results showed that, the yield of banana peels and pH value was significantly (P < 0.05) decreased by microwave drying (11.20% and pH 5.08, respectively) compared with control. Bulk density was increased by microwave drying and recorded 62.03 g/100 ml. The banana peels flour demonstrated that the highest WHC was 8.65 g water/g dry sample and OHC was 6.73 g oil/g dry sample compared to control. The results observed a significant decrease (P < 0.05) in moisture, fiber and total carbohydrates content of banana peels; whereas, the rates of ash, protein and fat content were increased after drying by microwave compared with control. The lignin content of banana peels was significantly increased (P < 0.05) by microwave drying and the recorded value was 8.31% dw. The results also revealed that the ascorbic acid content was significantly decreased by microwave drying and recorded 18.32 mg/100 g dw vis. 23.51 mg/100 g dw for control. With regarding the anti-nutrients, phytates, alkaloids, oxalates and hydrogen cyanides levels in banana peels, it was in the threshold value mentioned as safety restrict. These results demonstrated that the levels of phytates, alkaloids, oxalates and hydrogen cyanides were decreased by microwave drying methods which recorded 4.07%, 5.45%, 0.85% and 32.15%, respectively.
Abstract: This study aimed to determine the influence of some different juice extraction methods (screw type hand operated juice extractor and pressed squeeze juice extractor) as well as drying methods (microwave, solar and oven drying) on the chemical properties of lemon peels. It could be concluded that extraction of juice by screw type and drying of peel using the microwave drying method were the best preparative processing steps methods for lemon peel utilization as food additives.
Abstract: Lead is among the heavy metals and it is one of the highly toxic metals, recognized in most countries. This metal accumulates in animal organs as liver and kidney. The present investigation provides the concentrations of lead in cow's meat and different animal organs collected from three Egyptian environments. The results revealed that lead levels in muscle, liver, kidney, spleen and heart in industrial areas were higher than those detected in the same organs of other two areas (heavy traffic and rural), which recorded mean values of 3.0091, 1.7070, 1.8609, 0.6401 and 0.5332 mg/kg, respectively, followed by traffic areas, 2.9166, 1.4443, 1.6967, 0.4042 and 0.4103 mg/kg, respectively. The corresponding values of rural areas were 1.8895, 0.9550, 0.9117, 0.3215 and 0.2856 mg/kg, in the same order. It could be recommended that monitoring and evaluation of lead levels in meat at regular intervals are very important.

Abstract: This study extends technology acceptance model (TAM) to investigate the antecedents and consequences of social media adoption by tourists and travel agents. It compares their perceptions on social media adoption and its consequences. Online survey was addressed to tourists and travel agents for data collection purposes. Structural equation modelling was employed for analysis purposes. The findings revealed that the majority of tourists and travel agents involved in the study believe in the usefulness of social media adoption for travel planning and marketing purposes. They agree that adopting social media could change the attitude of tourists towards specific destination or attraction and influence their purchasing decisions. This study contributes to knowledge by extending TAM and provides some managerial implication to marketers.
Abstract: Knowledge management focuses on the development, storage, retrieval, and dissemination of information and expertise. It has become an important tool to improve performance in tourism enterprises. This includes improving decision-making, developing customer services, and increasing sales and profits. Knowledge management adoption depends on human, organizational and technological factors. This study aims to explore the concept of knowledge management in travel agents in Egypt. It explores the requirements of adoption and its impact on performance in these agencies. The study targets Category A travel agents in Egypt. The population of the study encompasses Category A travel agents having online presence. An online questionnaire is used to collect data from managers of travel agents. This study is useful for travel agents who are in urgent need to restructure their intermediary role and support their survival in the global travel market. The study sheds light on the requirements of adoption and the expected impact on performance. This could help travel agents identify their situation and the determine the extent to which they are ready to adopt knowledge management. This study is contributing to knowledge by providing insights from the tourism sector in a developing country where the concept of knowledge management is still in its infancy stages.
Abstract: Lead being a toxic heavy metal that mankind is
exposed to the highest levels of this metal. There are different sources
of environmental pollution with lead as lead alkyl additives in petrol
and manufacturing processes. The contaminated atmosphere in urban
and industrial areas by lead in Egypt may lead to the contamination
of foods beside the other different sources. The present investigation
studied the risk assessment of lead in some Egyptian edible
vegetables and fruits collected from different environments in Greater
Cairo Governorate, i.e. industrial, heavy traffic and rural areas. A
total of 325 leafy and fruity vegetables and fruits samples belonging
to 11, 6 and 4 different species, respectively were randomly collected
from markets of the three main models. Data indicated the variation
of lead levels in different three areas. The highest levels of lead were
detected in the samples collected from industrial and traffic areas.
However, the lowest levels were found in the rural areas. It could be
concluded that determination of lead levels in foods from different
localities and environments at regularly is very important.
Abstract: In present study, a large deposit of oolitic iron ore of
Late Carboniferous-Permotriassic-Lower Jurassic age was discovered
in Wadi Halfa and Argein areas, North Sudan. It seems that the iron
ore mineralization exists in the west and east bank of the River Nile
of the study area that are found on the Egyptian-Sudanese border.
The Carboniferous-Lower Jurassic age strata were covered by 67
sections and each section has been examined and carefully described.
The iron-ore in Wadi Halfa occurs as oolitic ironstone and contained
two horizons: (A) horizon and (B) horizon. Only horizon (A) was
observed in southern Argein area. The texture of the ore is variable
depending on the volume of the component. In thin sections, the
average of the ooids was ranged between 90%-80%. The matrix
varies between 10%-20% by volume and detritus quartz in other
component my reach up to 30% by volume in sandy massive ore.
Ooids size ranges from 0.2mm-1.00 mm on average in very coarse
ooids may attend up to 1 mm in size. The matrix around the ooids is
dominated by iron hydroxide, carbonate, fine, and amorphous silica.
The probable ore reserve estimate of 1.234 billion at a head grade of
41.29% Fe for the Wadi Halfa Oolitic Ironstone Formation. The iron
ore shows higher content of phosphorus ranges from 6.15% to 0.16%,
with mean 1.45%. The new technology Hatch–Ironstone Chloride
Segregation (HICS) can be used to produce commercial-quality of
iron and reduce phosphorus and silica to acceptable levels for steel
industry. The presence of infrastructures in addition to the presence
of massive quantities of iron ore would make exploitation
economically.
Abstract: Chitosan polyacrylic acid composite membranes were
prepared by a bulk polymerization method in presence of N, N'-
methylene bisacrylamide (crosslinker) and ammonium persulphate as
initiator. Membranes prepared from this copolymer in presence and
absence of Ag nanoparticles were characterized by measuring
mechanical and physical properties, water up-take and antibacterial
properties. The results obtained indicated that the prepared
membranes have antibacterial properties which increase with adding
Ag nanoparticles.
Abstract: Lead being a toxic heavy metal that mankind is
exposed to the highest levels of this metal from environmental
pollutants. A total of 180 Male scalp hair samples were collected
from different environments in Greater Cairo (GC), i.e. industrial,
heavy traffic and rural areas (60 samples from each) having different
activities during the period of, 1/5/2010 to 1/11/2012. Hair samples
were collected during five stages. Data proved that the concentration
of lead in male industrial areas of Cairo ranged between 6.2847 to
19.0432 μg/g, with mean value of 12.3288 μg/g. On the other hand,
lead content of hair samples of residential-traffic areas ranged
between 2.8634 to 16.3311 μg/g with mean value of 9.7552 μg/g.
While lead concentration on the hair of the male residents living in
rural area ranged between 1.0499-9.0402μg/g with mean value of
4.7327 μg/g. The Pb concentration in scalp hair of Cairo residents of
residential-traffic and rural traffic areas was observed to follow the
same pattern. The pattern was that of decrease concentration of
summer and its increase in winter. Then, there was a marked increase
in Pb concentration of summer 2012, and this increase was
significant. These were obviously seen for the residential-traffic and
rural areas residents. Pb pollution in residents of industrial areas
showed the same seasonal pattern, but there was marked to decrease
in Pb concentration of summer 2012, and this decrease was
significant. Lead pollution in residents of GC was serious. It is worth
noting that the atmosphere is still contaminated by lead despite a
decade of using unleaded gasoline. Strong seasonal variation in
higher Pb concentration on winter than in summer was found. Major
contributions to the pollution with Pb could include industry
emissions, motor vehicle emissions and long transported dust from
outside Cairo. More attention should be paid to the reduction of Pb
content of the urban aerosol and to the Pb pollution health.
Abstract: Animal fats (camel, sheep, goat, rabbit and chicken)
and vegetable oils (corn, sunflower, palm oil and olive oil) were
substituted with different proportions (1, 5, 10 and 20%) of lard.
Fatty acid composition in TG and 2-MG were determined using
lipase hydrolysis and gas chromatography before and after
adulteration. Results indicated that, genuine lard had a high
proportion (60.97%) of the total palmitic acid at 2-MG. However, it
was 8.70%, 16.40%, 11.38%, 10.57%, 29.97 and 8.97% for camel,
beef, sheep, goat, rabbit and chicken, respectively. It could be noticed
also the position-2-MG is mostly occupied by unsaturated fatty acids
among all tested fats except lard. Vegetable oils (corn, sunflower,
palm oil and olive oil) revealed that the levels of palmitic acid
esterifies at 2-MG position was 6.84, 1.43, 9.86 and 1.70%,
respectively. It could be observed also the studied oils had a higher
level of unsaturated fatty acids in the same position, compared with
animal fats under investigation. Moreover, palmitic acid esterifies at
2-MG and PAEF increased gradually as the substituted levels
increased among all tested fat and oil samples. Statistical analysis
showed that the PAEF correlated well with lard level. The detection
of lard in some commercial processed foods (5 French fries, 4 Butter
fats, 5 processed meat and 6 candy samples) was carried out. Results
revealed that 2 samples of French fries and 4 samples of processed
meat contained lard due to their higher PAEF, while butter fat and
candy were free of lard.
Abstract: Malathion (ML) is a well known pesticide commonly
used in many agricultural and non-agricultural processes. Its toxicity
has been attributed primarily to the accumulation of acetylcholine
(Ach) at nerve junctions, due to the inhibition of acetylcholinesterase
(AChE). The aim of the current research was to study the protective
effect of the melissa plant extract against reproductive impairment
induced by malathion in 32 male albino rats, and the biological
experiment was divided into four groups (8 in each) that given
malathion (27 mg/kg; 1/50 of the LD50 for an oral dose) and/or
Melissa officinalis (MO) extract (200mg/kg/day) by gavages
technique. The sperm counts, sperm motility, sperm morphology,
FSH, LH, and testosterone levels had been determined in testes
homogenate at the end of the experiment. It is worthy to report that,
rats treated with melissa extract did not show a significant difference
when compared with the control group, while rats given malathion
alone had significantly lower sperm count, sperm motility, and
significantly higher abnormal sperm numbers, than the untreated
control rats as well as having significantly lower serum FSH, LH, and
testosterone levels compared with the control group. Administrations
of melissa extract restore all mentioned histological parameters
towards the control group and the melissa extract had a strong
positive protective effect against malathion toxicity. Results the of
biological parameters were confirmed by the histological
examination of rat testes and indicated that, both control and melissa
groups showing normal seminiferous tubules, while malathion group
testicular tissues had necrosis, edema in the seminiferous tubules and
degeneration of spermatogonial cells lining the seminiferous tubules
with incomplete spermatogenesis. The use of melissa against
malathion improved the histological picture and showing normal
seminiferous tubules with complete spermatogenesis and almost there
was no histopathological changes could be noted.
Abstract: Lead (Pb) poisoning is one of the most common and
preventable environmental health problems. There are different
sources of environmental pollution with lead as lead alkyl additives
in petrol and manufacturing processes. Pb in the atmosphere can be
deposited in urban soils, and may then be re-suspended to re-enter the
atmosphere. This could increase human exposure to Pb and cause
long-term health effects. Thus, monitoring Pb pollution is considered
one of the major tasks in controlling pollution. Scalp hair can be
utilized for the determination of lead (Pb) concentration. It provides a
lasting record of metal intakes of weeks or even months, and for most
metals, their accumulation in hair reflects their accumulation in the
whole body. This work was conducted to investigate the
concentration of lead in male scalp hair of Cairo (residential-traffic
and residential-industrial) and rural residents after twenty years of
phasing out of leaded gasoline. Results indicated that the mean
concentration of lead in hair of residential-traffic (9.7552 μg/g ±0.71)
and residential-industrial (12.3288 μg/g ±1.13) was significantly
higher than that in rural residents (4.7327 μg/g ±0.67). The mean
concentration of lead in hair of resident’s industrial areas was the
highest among Cairo residents and not the traffic areas as it was
before phasing out of leaded gasoline. Twenty years of phasing out of
leaded gasoline in Cairo has greatly improved the lead pollution
among residents of traffic areas, but industrial areas residents were
still suffering from lead pollution, which needs more efforts to
control the sources of lead pollution.
Abstract: Soybean Natto powder was added to the burger in order to enhance the oxidative stability as well as decreases the microbial spoilage. The soybean bioactives compound (soybean Natto) as antioxidant and antimicrobial were added at level of 1, 2 and 3%. Chemical analysis and physical properties were affected by soybean Natto addition. All the tested soybean Natto additives showed strong antioxidant properties. The microbiological indicators were significantly (P < 0.05) affected by the addition of the soybean Natto. Decreasing trends of different extent were also observed in samples of the treatments for total viable counts, Coliform, Staphylococcus aureus, yeast and molds. Storage period was significantly (P < 0.05) affected on microbial counts in all samples Staphylococcus aureus were the most sensitive microbe followed by Coliform group of the sample containing soybean Natto. Sensory attributes were also performed, added soybean Natto exhibits beany flavor which was clear about samples of 3% soybean Natto.
Abstract: The results of an experimental program conducted on seventeen simply supported concrete beams to study the effect of transverse reinforcement on the behavior of lap splice of steel reinforcement in tension zones in high strength concrete beams, are presented. The parameters included in the experimental program were the concrete compressive strength, the lap splice length, the amount of transverse reinforcement provided within the splice region, and the shape of transverse reinforcement around spliced bars. The experimental results showed that the displacement ductility increased and the mode of failure changed from splitting bond failure to flexural failure when the amount of transverse reinforcement in splice region increased, and the compressive strength increased up to 100 MPa. The presence of transverse reinforcement around spliced bars had pronounced effect on increasing the ultimate load, the ultimate deflection, and the displacement ductility. The prediction of maximum steel stresses for spliced bars using ACI 318-05 building code was compared with the experimental results. The comparison showed that the effect of transverse reinforcement around spliced bars has to be considered into the design equations for lap splice length in high strength concrete beams.
Abstract: The fractal-shaped orifices are assumed to have a
significant effect on the pressure drop downstream pipe flow due to
their edge self-similarity shape which enhances the mixing
properties. Here, we investigate the pressure drop after these fractals
using a digital micro-manometer at different stations downstream a
turbulent flow pipe then a direct comparison has been made with the
pressure drop measured from regular orifices with the same flow
area. Our results showed that the fractal-shaped orifices have a
significant effect on the pressure drop downstream the flow. Also
the pressure drop measured across the fractal-shaped orifices is
noticed to be lower that that from ordinary orifices of the same flow
areas. This result could be important in designing piping systems
from point of view of losses consideration with the same flow
control area. This is promising to use the fractal-shaped orifices as
flowmeters as they can sense the pressure drop across them
accurately with minimum losses than the regular ones.
Abstract: Dried soy protein hydrolysate powder was added to

time of storage.

Abstract: Later marine propeller is the main component of ship
propulsion system. For a non-series propeller, it is difficult to
indicate the open water marine propeller performance without an
experimental study to measure the marine propeller parameters.
In the present study, the open water performance of a non-series
marine propeller has been carried out experimentally. The
geometrical aspects of a commercial non-series marine propeller
have been measured for a propeller blade area ratio of 0.3985. The
measured propeller performance parameters were the thrust and
torque coefficients for different propeller rotational speed and
different water channel flow velocity, then the open water
performance for the propeller has been plotted.
In addition, a direct comparison between the obtained
experimental results and a theoretical study of a B-series marine
propeller of the same blade area ratio has been carried out. A
correction factor has been introduced to apply the operating
conditions of the experimental results to that of the theoretical study
for the studied marine propeller.
Abstract: Cutting fluids, usually in the form of a liquid, are
applied to the chip formation zone in order to improve the cutting
conditions. Cutting fluid can be expensive and represents a biological
and environmental hazard that requires proper recycling and
disposal, thus adding to the cost of the machining operation. For
these reasons dry cutting or dry machining has become an
increasingly important approach; in dry machining no coolant or
lubricant is used. This paper discussed the effect of the dry cutting on
cutting force and tool life when machining aerospace materials
(Haynes 242) with using two different coated carbide cutting tools
(TiAlN and TiN/MT-TiCN/TiN). Response surface method (RSM)
was used to minimize the number of experiments. ParTiAlN Swarm
Optimisation (PSO) models were developed to optimize the
machining parameters (cutting speed, federate and axial depth) and
obtain the optimum cutting force and tool life. It observed that
carbide cutting tool coated with TiAlN performed better in dry
cutting compared with TiN/MT-TiCN/TiN. On other hand, TiAlN
performed more superior with using of 100 % water soluble coolant.
Due to the high temperature produced by aerospace materials, the
cutting tool still required lubricant to sustain the heat transfer from
the workpiece.
Abstract: The dispersion of heavy particles line in an isotropic
and incompressible three-dimensional turbulent flow has been
studied using the Kinematic Simulation techniques to find out the
evolution of the line fractal dimension. In this study, the fractal
dimension of the line is found for different cases of heavy particles
inertia (different Stokes numbers) in the absence of the particle
gravity with a comparison with the fractal dimension obtained in the
diffusion case of material line at the same Reynolds number. It can
be concluded for the dispersion of heavy particles line in turbulent
flow that the particle inertia affect the fractal dimension of a line
released in a turbulent flow for Stokes numbers 0.02 < St < 2. At the
beginning for small times, most of the different cases are not affected
by the inertia until a certain time, the particle response time τa, with
larger time as the particles inertia increases, the fractal dimension of
the line increases owing to the particles becoming more sensitive to
the small scales which cause the change in the line shape during its
journey.
