Abstract: Larval rearing and seed production of most of tetra fishes (Family: Characidae) is critical due to their small size larvae and limited numbers of spawning attempts. Abstract: Many high-risk pathogens that cause disease in
humans are transmitted through various food items. Food-borne
disease constitutes a major public health problem. Assessment of the
quality and safety of foods is important in human health. Rapid and
easy detection of pathogenic organisms will facilitate precautionary
measures to maintain healthy food. The Polymerase Chain Reaction
(PCR) is a handy tool for rapid detection of low numbers of bacteria.
We have designed gene specific primers for most common food
borne pathogens such as Staphylococci, Salmonella and E.coli.
Bacteria were isolated from food samples of various food outlets and
identified using gene specific PCRs. We identified Staphylococci,
Salmonella and E.coli O157 using gene specific primers by rapid and
direct PCR technique in various food samples. This study helps us in
getting a complete picture of the various pathogens that threaten to
cause and spread food borne diseases and it would also enable
establishment of a routine procedure and methodology for rapid
identification of food borne bacteria using the rapid technique of
direct PCR. This study will also enable us to judge the efficiency of
present food safety steps taken by food manufacturers and exporters.
Abstract: Consumer demand for products with low fat or sugar content and low levels of food additives, as well as cost factors, make exopolysaccharides (EPS) a viable alternative. EPS remain an interesting tool to modulate the sensory properties of yoghurt. This study was designed to evaluate EPS production potential of commercial yoghurt starter cultures (Yo-Flex starters: Harmony 1.0, TWIST 1.0 and YF-L902, Chr.Hansen, Denmark) and their influence on an apparent viscosity of yoghurt samples. The production of intracellularly synthesized EPS by different commercial yoghurt starters varies roughly from 144,08 to 440,81 mg/l. Analysing starters’ producing EPS, they showed large variations in concentration and supposedly composition. TWIST 1.0 had produced greater amounts of EPS in MRS medium and in yoghurt samples but there wasn’t determined significant contribution to development of texture as well as an apparent viscosity of the final product. YF-L902 and Harmony 1.0 starters differed considerably in EPS yields, but not in apparent viscosities (p>0.05) of the final yoghurts. Correlation between EPS concentration and viscosity of yoghurt samples was not established in the study.
Abstract: Irradiation is considered one of the most efficient technological processes for the reduction of microorganisms in food. It can be used to improve the safety of food products, and to extend their shelf lives. The aim of this study was to evaluate the effects of gamma irradiation for improvement of saffron shelf life. Samples were treated with 0 (none irradiated), 1.0, 2.0, 3.0 and 4.0 kGy of gamma irradiation and held for 2 months. The control and irradiated samples were underwent microbial analysis, chemical characteristics and sensory evaluation at 30 days intervals. Microbial analysis indicated that irradiation had a significant effect (P < 0.05) on the reduction of microbial loads. There was no significant difference in sensory quality and chemical characteristics during storage in saffron.

By applying the comparison theorem of the differential equation and constructing a suitable Lyapunov functional, sufficient conditions which guarantee the permanence and existence of a unique globally attractive positive almost periodic solution of the system are obtained.
Abstract: The crop rice is the staple food of most Sierra Leone
with no close substitute. However, its cultivation has been on its last
legs over the years. The decline in the domestic rice cultivation has
had vicious socio-economic implications such as hiking consumer
prices, balance of payment dilemmas with debt burden. The objective
of this study is thus, to assess the effect of the shift of rural labour
towards non-agricultural sectors on rice cultivation. The tools utilized
for analyzing the problem under consideration involved a thorough
descriptive statistics and generalized linear model using OLS
technique. Increased rural population was established positive and
significant in affecting rice cultivation. Fertilizer utilization was
insignificant in rice cultivation. For reducing the shift of rural labor
force towards nonagricultural sectors, the government should make
the agricultural sector very lucrative.
Abstract: As the increase of intraoral acidity due to ingestion of sweet foods and acidic beverages usually bring forth a dental caries and a erosion, the measurement of intraoral pH is essential in the study of oral environment. The indwelling intraoral pH telemetry for lasting longer than 24 hours in the mouth was developed to overcome the limits of conventional wire electrode method previously used for salivary and plaque pH measurement, and to assess its effectiveness.
Abstract: Ramadan requires individuals to abstain from food and fluid intake between sunrise and sunset; physiological considerations predict that poorer mood, physical performance and mental performance will result. In addition, any difficulties will be worsened because preparations for fasting and recovery from it often mean that nocturnal sleep is decreased in length, and this independently affects mood and performance.
A difficulty of interpretation in many studies is that the observed changes could be due to fasting but also to the decreased length of sleep and altered food and fluid intakes before and after the daytime fasting. These factors were separated in this study, which took place over three separate days and compared the effects of different durations of fasting (4, 8 or 16h) upon a wide variety of measures (including subjective and objective assessments of performance, body composition, dehydration and responses to a short bout of exercise) - but with an unchanged amount of nocturnal sleep, controlled supper the previous evening, controlled intakes at breakfast and daytime naps not being allowed. Many of the negative effects of fasting observed in previous studies were present in this experiment also. These findings indicate that fasting was responsible for many of the changes previously observed, though some effect of sleep loss, particularly if occurring on successive days (as would occur in Ramadan) cannot be excluded.
Abstract: A cross sectional survey design was used to collect
data from 370 diabetic patients. Two instruments were used in
obtaining data; in-depth interview guide and researchers- developed
questionnaire. Fisher's exact test was used to investigate association
between the identified factors and nonadherence. Factors identified
were: socio-demographic factors such as: gender, age, marital status,
educational level and occupation; psychosocial obstacles such as:
non-affordability of prescribed diet, frustration due to the restriction,
limited spousal support, feelings of deprivation, feeling that
temptation is inevitable, difficulty in adhering in social gatherings
and difficulty in revealing to host that one is diabetic; health care
providers obstacles were: poor attitude of health workers, irregular
diabetes education in clinics , limited number of nutrition education
sessions/ inability of the patients to estimate the desired quantity of
food, no reminder post cards or phone calls about upcoming patient
appointments and delayed start of appointment / time wasting in
clinics.
Abstract: Waste corn pulp was investigated as a potential feedstock during vermicomposting using Eisenia fetida. Corn pulp is the major staple food in Southern Africa and constitutes about 25% of the total organic waste. Wastecooked corn pulp was blended with cow dung in the ratio 6:1 respectively to optimize the vermicomposting process. The feedstock was allowed to vermicompost for 30 days. The vermicomposting took place in a 3- tray plastic worm bin. Moisture content, temperature, pH, and electrical conductivity were monitoreddaily. The NPK content was determined at day 30. During vermicomposting, moisture content increased from 27.68% to 52.41%, temperature ranged between 19- 25◦C, pH increased from 5.5 to 7.7, and electrical conductivity decreased from 80000μS/cm to 60000μS/cm. The ash content increased from 11.40% to 28.15%; additionally the volatile matter increased from 1.45% to 10.02%. An odorless, dark brown vermicompost was obtained. The vermicompost NPK content was 4.19%, 1.15%, and 6.18% respectively.
Abstract: Rice, which is the staple food in Sierra Leone, is
consumed on a daily basis. It is the most imperative food crop
extensively grown by farmers across all ecologies in the country.
Though much attention is now given to rice grain production through
the small holder commercialization programme (SHCP), however, no
attention has been given in investigating the limitations faced by rice
producers. This paper will contribute to attempts to overcome the
development challenges caused by food insecurity. The objective of
this paper is thus, to analysis the relationship between rice production
and the domestic retail price of rice. The study employed a log linear
model in which, the quantity of rice produced is the dependent
variable, quantity of rice imported, price of imported rice and price of
domestic rice as explanatory variables. Findings showed that, locally
produced rice is even more expensive than the imported rice per ton,
and almost all the inhabitants in the capital city which hosts about
65% of the entire population of the country favor imported rice, as it
is free from stones with other impurities. On the other hand, to
control price and simultaneously increase rice production, the
government should purchase the rice from the farmers and then sell to private retailers.
Abstract: Decentralized eco-sanitation system is a promising and sustainable mode comparing to the century-old centralized conventional sanitation system. The decentralized concept relies on an environmentally and economically sound management of water, nutrient and energy fluxes. Source-separation systems for urban waste management collect different solid waste and wastewater streams separately to facilitate the recovery of valuable resources from wastewater (energy, nutrients). A resource recovery centre constituted for 20,000 people will act as the functional unit for the treatment of urban waste of a high-density population community, like Singapore. The decentralized system includes urine treatment, faeces and food waste co-digestion, and horticultural waste and organic fraction of municipal solid waste treatment in composting plants. A design model is developed to estimate the input and output in terms of materials and energy. The inputs of urine (yellow water, YW) and faeces (brown water, BW) are calculated by considering the daily mean production of urine and faeces by humans and the water consumption of no-mix vacuum toilet (0.2 and 1 L flushing water for urine and faeces, respectively). The food waste (FW) production is estimated to be 150 g wet weight/person/day. The YW is collected and discharged by gravity into tank. It was found that two days are required for urine hydrolysis and struvite precipitation. The maximum nitrogen (N) and phosphorus (P) recovery are 150-266 kg/day and 20-70 kg/day, respectively. In contrast, BW and FW are mixed for co-digestion in a thermophilic acidification tank and later a decentralized/centralized methanogenic reactor is used for biogas production. It is determined that 6.16-15.67 m3/h methane is produced which is equivalent to 0.07-0.19 kWh/ca/day. The digestion residues are treated with horticultural waste and organic fraction of municipal waste in co-composting plants.
Abstract: The Muslim faith requires individuals to fast between
the hours of sunrise and sunset during the month of Ramadan. Our
recent work has concentrated on some of the changes that take place
during the daytime when fasting. A questionnaire was developed to
assess subjective estimates of physical, mental and social activities,
and fatigue. Four days were studied: in the weeks before and after
Ramadan (control days) and during the first and last weeks of
Ramadan (experimental days). On each of these four days, this
questionnaire was given several times during the daytime and once
after the fast had been broken and just before individuals retired at
night.
During Ramadan, daytime mental, physical and social activities
all decreased below control values but then increased to abovecontrol
values in the evening. The desires to perform physical and
mental activities showed very similar patterns. That is, individuals
tried to conserve energy during the daytime in preparation for the
evenings when they ate and drank, often with friends. During
Ramadan also, individuals were more fatigued in the daytime and
napped more often than on control days. This extra fatigue probably
reflected decreased sleep, individuals often having risen earlier
(before sunrise, to prepare for fasting) and retired later (to enable
recovery from the fast).
Some physiological measures and objective measures of
performance (including the response to a bout of exercise) have also
been investigated. Urine osmolality fell during the daytime on
control days as subjects drank, but rose in Ramadan to reach values
at sunset indicative of dehydration. Exercise performance was also
compromised, particularly late in the afternoon when the fast had
lasted several hours. Self-chosen exercise work-rates fell and a set
amount of exercise felt more arduous. There were also changes in
heart rate and lactate accumulation in the blood, indicative of greater
cardiovascular and metabolic stress caused by the exercise in
subjects who had been fasting. Daytime fasting in Ramadan produces
widespread effects which probably reflect combined effects of sleep
loss and restrictions to intakes of water and food.
Abstract: The importance of ensuring safe meat handling and
processing practices has been demonstrated in global reports on food
safety scares and related illness and deaths. This necessitated stricter
meat safety control strategies. Today, many countries have regulated
towards preventative and systematic control over safe meat
processing at abattoirs utilizing the Hazard Analysis Critical Control
Point (HACCP) principles. HACCP systems have been reported as
effective in managing food safety risks, if correctly implemented.
South Africa has regulated the Hygiene Management System (HMS)
based on HACCP principles applicable to abattoirs. Regulators utilise
the Hygiene Assessment System (HAS) to audit compliance at
abattoirs. These systems were benchmarked from the United
Kingdom (UK). Little research has been done them since inception as
of 2004. This paper presents a review of the two systems, its
implementation and comparison with HACCP. Recommendations are
made for future research to demonstrate the utility of the HMS and
HAS in assuring safe meat to consumers.
Abstract: Biologically active peptides are of particular interest
in food science and human nutrition because they have been shown to play several physiological roles. In vitro gastrointestinal digestion of lentil and whey proteins in this study produced high angiotensin-I converting enzyme inhibitory activity with 75.5±1.9 and 91.4±2.3%
inhibition, respectively. High ACE inhibitory activity was observed in lentil after 5 days of germination (84.3±1.2%). Fractionation by
reverse phase chromatography gave inhibitory activities as high as
86.3±2.0 for lentil, 94.8±1.8% for whey and 93.7±1.7% at 5th day of germination. Further purification by HPLC resulted in several
inhibitory peptides with IC50 values ranging from 0.064 to 0.164
mg/ml. These results demonstrate that lentil proteins are a good
source of peptides with ACE inhibitory activity that can be released by germination or gastrointestinal digestion. Despite the lower bioactivity in comparison with whey proteins, incorporation of lentil proteins in functional food formulations and natural drugs look promising.
