Abstract: Phosphorus is an essential nutrient for plant life which is most frequently found as phosphate in water. Once phosphate is found in abundance in surface water, a series of adverse effects on an ecosystem can be initiated. Therefore, a portable and reliable method is needed to monitor the phosphate concentrations in the field. In this paper, an inexpensive dip strip device with the ascorbic acid/antimony reagent dried on blotting paper along with wet chemistry is developed for the detection of low concentrations of phosphate in water. Ammonium molybdate and sulfuric acid are separately stored in liquid form so as to improve significantly the lifetime of the device and enhance the reproducibility of the device’s performance. The limit of detection and quantification for the optimized device are 0.134 ppm and 0.472 ppm for phosphate in water, respectively. The device’s shelf life, storage conditions, and limit of detection are superior to what has been previously reported for the paper-based phosphate detection devices.
Abstract: Moraceae family has immense phytochemical constituents and significant pharmacological properties, hence have great medicinal values. The aim of this study was to screen and quantify phytochemicals as well as the antioxidant activities of the leaf and stem bark extracts and fractions (crude ethanol extracts, n-hexane, ethyl acetate and aqueous ethanol fractions) of Ficus sagittifolia. Leaf and stem bark of F. sagittifolia were extracted by maceration method using ethanol to give ethanol crude extract. The ethanol crude extract was partitioned by n-hexane and ethyl-acetate to give their respective fractions. All the extracts were screened for their phytochemicals using standard methods. The total phenolic, flavonoid, tannin, saponin contents and antioxidant activity were determined by spectrophotometric method while the alkaloid content was evaluated by titrimetric method. The amount of total phenolic in extracts and fractions were estimated in comparison to gallic acid, whereas total flavonoids, tannins and saponins were estimated corresponding to quercetin, tannic acid and saponin respectively. 2, 2-diphenylpicryl hydrazyl radical (DPPH)* and phosphomolybdate methods were used to evaluate the antioxidant activities of leaf and stem bark of F. sagittifolia. Phytochemical screening revealed the presence of flavonoids, saponins, terpenoids/steroids, alkaloids for both extracts of leaf and stem bark of F. sagittifolia. The phenolic content of F. sagittifolia was most abundant in leaf ethanol crude extract as 3.53 ± 0.03 mg/g equivalent of gallic acid. Total flavonoids and tannins content were highest in stem bark aqueous ethanol fraction of F. sagittifolia estimated as 3.41 ± 0.08 mg/g equivalent of quercetin and 1.52 ± 0.05 mg/g equivalent of tannic acid respectively. The hexane leaf fraction of F. sagittifolia had the utmost saponin and alkaloid content as 5.10 ± 0.48 mg/g equivalent of saponins and 0.171 ± 0.39 g of alkaloids. Leaf aqueous ethanol fraction of F. sagittifolia showed high antioxidant activity (IC50 value of 63.092 µg/mL) and stem ethanol crude extract (227.43 ± 0.78 mg/g equivalent of ascorbic acid) for DPPH and phosphomolybdate method respectively and the least active was found to be the stem hexane fraction using both methods (313.32 µg/mL; 16.21 ± 1.30 mg/g equivalent of ascorbic acid). The presence of these phytochemicals in the leaf and stem bark of F. sagittifolia are responsible for their therapeutic importance as well as the ability to scavenge free radicals in living systems.
Abstract: Colocasia esculenta leaves and roots are widely used in Asian countries, such as, India, Srilanka and Pakistan, as food and feed material. The root is high in carbohydrates and rich in zinc. The leaves and stalks are often traditionally preserved to be eaten in dry season. Leaf juice is stimulant, expectorant, astringent, appetizer, and otalgia. Looking at the medicinal uses of the plant leaves; phytochemicals were extracted from the plant leaves and were characterized using Fourier-transform infrared spectroscopy (FTIR) to find the functional groups. Phytochemical analysis of Colocasia esculenta (L.) leaf was studied using three solvents (methanol, chloroform, and ethanol) with soxhlet apparatus. Powder of the leaves was employed to obtain the extracts, which was qualitatively and quantitatively analyzed for phytochemical content using standard methods. Phytochemical constituents were abundant in the leave extract. Leaf was found to have various phytochemicals such as alkaloids, glycosides, flavonoids, terpenoids, saponins, oxalates and phenols etc., which could have lot of medicinal benefits such as reducing headache, treatment of congestive heart failure, prevent oxidative cell damage etc. These phytochemicals were identified using UV spectrophotometer and results were presented. In order to find the antioxidant activity of the extract, DPPH (2,2-diphenyl-1-picrylhydrazyl) method was employed using ascorbic acid as standard. DPPH scavenging activity of ascorbic acid was found to be 84%, whereas for ethanol it was observed to be 78.92%, for methanol: 76.46% and for chloroform: 72.46%. Looking at the high antioxidant activity, Colocasia esculenta may be recommended for medicinal applications. The characterizations of functional groups were analyzed using FTIR spectroscopy.
Abstract: The influence of microwave drying methods on the nutritional and anti-nutritional composition and physical characteristics of banana peels was investigated. Banana peels were assessed for physical properties such as yield, pH value, bulk density, water holding capacity (WHC) and oil holding capacity (OHC). The results showed that, the yield of banana peels and pH value was significantly (P < 0.05) decreased by microwave drying (11.20% and pH 5.08, respectively) compared with control. Bulk density was increased by microwave drying and recorded 62.03 g/100 ml. The banana peels flour demonstrated that the highest WHC was 8.65 g water/g dry sample and OHC was 6.73 g oil/g dry sample compared to control. The results observed a significant decrease (P < 0.05) in moisture, fiber and total carbohydrates content of banana peels; whereas, the rates of ash, protein and fat content were increased after drying by microwave compared with control. The lignin content of banana peels was significantly increased (P < 0.05) by microwave drying and the recorded value was 8.31% dw. The results also revealed that the ascorbic acid content was significantly decreased by microwave drying and recorded 18.32 mg/100 g dw vis. 23.51 mg/100 g dw for control. With regarding the anti-nutrients, phytates, alkaloids, oxalates and hydrogen cyanides levels in banana peels, it was in the threshold value mentioned as safety restrict. These results demonstrated that the levels of phytates, alkaloids, oxalates and hydrogen cyanides were decreased by microwave drying methods which recorded 4.07%, 5.45%, 0.85% and 32.15%, respectively.
Abstract: In this research, dried linden (Tilia argentea) leaves and blossoms were used as a raw material for mineral enriched herbal tea beverage production. For this aim, %1 dried linden was infused with boiling water (100 °C) for 5 minutes. After cooling, sucrose, citric acid, ascorbic acid, natural lemon flavor and natural mineral water were added. Beverage samples were plate filtered, filled into 200-mL glass bottles, capped then pasteurized at 98 °C for 15 minutes. Water soluble dry matter, titratable acidity, ascorbic acid, pH, minerals (Fe, Ca, Mg, K, Na), color (L*, a*, b*), turbidity, bioaccessible phenolics and antioxidant capacity were analyzed. Water soluble dry matter, titratable acidity, and ascorbic were determined as 7.66±0.28 g/100 g, 0.13±0.00 g/100 mL, and 19.42±0.62 mg/100 mL, respectively. pH was measured as 3.69. Fe, Ca, Mg, K and Na contents of the beverage were determined as 0.12±0.00, 115.48±0.05, 34.72±0.14, 48.67±0.43 and 85.72±1.01 mg/L, respectively. Color was measured as 13.63±0.05, -4.33±0.05, and 3.06±0.05 for L*, a*, and b* values. Turbidity was determined as 0.69±0.07 NTU. Bioaccessible phenolics were determined as 312.82±5.91 mg GAE/100 mL. Antioxidant capacities of chemical (MetOH:H2O:HCl) and physiological extracts (in vitro digestive enzymatic extraction) with DPPH (27.59±0.53 and 0.17±0.02 μmol trolox/mL), FRAP (21.01±0.97 and 13.27±0.19 μmol trolox/mL) and CUPRAC (44.71±9.42 and 2.80±0.64 μmol trolox/mL) methods were also evaluated. As a result, enrichment with natural mineral water was proposed for the development of functional and nutritional values together with a good potential for commercialization.
Abstract: Present investigation is performed to evaluate the effects of foliar application of salicylic acid, glycine betaine, ascorbic acid, nano-silica, and nano-titanium dioxide on sunflower. Results showed that the first two principal components were sufficient to create a two-dimensional treatment by trait biplot, and such biplot accounted percentages of 49% and 19%, respectively of the interaction between traits and treatments. The vertex treatments of polygon were ascorbic acid, glycine betaine, nano-TiO2, and control indicated that high performance in some important traits consists of number of days to seed maturity, number of seeds per head, number heads per single plant, hundred seed weight, seed length, seed yield performance, and oil content. Treatments suitable for obtaining the high seed yield were identified in the vector-view function of biplot and displayed nano-silica and nano titanium dioxide as the best treatments suitable for obtaining of high seed yield.

Abstract: Red pepper (Capsicum annum L.) has long been
recognized as a good source of antioxidants, being rich in ascorbic
acid and other phytochemicals. In Turkish cuisine red pepper is
sometimes consumed raw in salads and baked as a garnish, but its
most wide consumption type is red pepper paste. The processing of
red pepper into pepper paste includes various thermal treatment steps
such as heating and pasteurizing. There are reports demonstrating an
enhancement or reduction in antioxidant activity of vegetables after
thermal treatment. So this study was conducted to investigate the
total phenolic, ascorbic acid and total carotenoids as well as free
radical scavenging activity of raw red pepper and various red pepper
pastes obtainable on the market. The samples were analyzed for
radical-scavenging activity (RSA) and total polyphenol (TP) content
using 1,1-diphenyl-2-picrylhydrazyl (DPPH) and Folin-Ciocalteu
methods, respectively. Total carotenoids and ascorbic acid contents
were determined spectrophotometrically. Results suggest that hot
pepper paste contained significantly (P0.05) difference in RSA, ascorbic acid and total carotenoids
content between sweet and hot red pepper paste products. It is
concluded that the red pepper paste, that has a wide range of
consumption in Turkish cuisine, presents a good dose of phenolic
compounds and antioxidant capacity and it should be regarded as a
functional food.
Abstract: Eucalyptus species are well reputed for their
traditional use in Asia as well as in other parts of the world; therefore,
the present study was designed to investigate the antimicrobial and
antioxidant activities associated with essential oils from different
Eucalyptus species. Essential oils from the leaves of six Eucalyptus
species, including: Eucalyptus woodwardi, Eucalyptus stricklandii,
Eucalyptus salubris, Eucalyptus sargentii, Eucalyptus torquata and
Eucalyptus wandoo were separated by hydrodistillation and dried
over anhydrous sodium sulphate. DPPH, ferric reducing antioxidant
power, and hydroxyl radical scavenging activity assays were carried
out to evaluate the antioxidant potential of the oils. The results
indicate that examined oils exhibit substantial antioxidant activities
relative to ascorbic acid. Previously, these oils were evaluated for
their antimicrobial activities, against wide range of bacterial and
fungal strains, and they were shown to possess significant
antimicrobial activities. In this study, further investigation into the
growth kinetics of oil-treated microbial cultures was conducted. The
results clearly demonstrate that the microbial growth was markedly
inhibited when treated with sub-MIC concentrations of the oils.
Taken together, the results obtained indicate a high potential of the
examined essential oils as bioactive oils, for nutraceutical and
medical applications, possessing significant antioxidant and anti
microbial activities.
Abstract: Heavy metals are one of the major groups of
contaminants in the environment and many of them are toxic even at

play important roles in the biological function of many enzymes in
living organisms. Metals such as zinc, iron, and cooper are important
for survival and activity of enzymes in plants, however heavy metals
can inhibit enzyme which is responsible for defense system of plants.
Polyphenol oxidase (PPO) is a copper-containing metalloenzyme
which is responsible for enzymatic browning reaction of plants.
Enzymatic browning is a major problem for the handling of
vegetables and fruits in food industry. It can be increased and
effected with many different futures such as metals in the nature and
ground. In the present work, PPO was isolated and characterized
from green leaves of red poppy plant (Papaverr hoeas). Then, the
effect of some known antibrowning agents which can form
complexes with metals and metals were investigated on the red poppy
PPO activity. The results showed that glutathione was the most
potent inhibitory effect on PPO activity. Cu(II) and Fe(II) metals
increased the enzyme activities however, Sn(II) had the maximum
inhibitory effect and Zn(II) and Pb(II) had no significant effect on the
enzyme activity. In order to reduce the effect of heavy metals, the
effects of metal-antibrowning agent complexes on the PPO activity
were determined. EDTA and metal complexes had no significant
effect on the enzyme. L-ascorbic acid and metal complexes decreased
but L-ascorbic acid-Cu(II)-complex had no effect. Glutathione–metal
complexes had the best inhibitory effect on Red poppy leaf PPO
activity.
Abstract: Soy protein is a common ingredient added to processed meats to enhance its functional characteristics. In our study, soybean products (fermented soy Natto and protein hydrolysate) containing hydrolyzed peptides and amino acids, with or without ascorbic acid were added to burger in order to improve its quality characteristics. Abstract: This research describes a voltammetric approach to determine amounts of vitamin C (Ascorbic acid) in orange juice sample, using three screen printed electrode. The anodic currents of vitamin C were proportional to vitamin C concentration in the range of 0 – 10.0 mM with the limit of detection of 1.36 mM. The method was successfully employed with 2 µL of the working solution dropped on the electrode surface. The proposed method was applied for the analysis of vitamin C in packed orange juice without sample purification or complexion of sample preparation step.
Abstract: At present, it is widely-known that free radicals are the causes of illness such as cancers, coronary heart disease, Alzheimer’s disease and aging. One method of protection from free radical is the consumption of antioxidant-containing foods or herbs. Several analytical methods have been used for qualitative and quantitative determination of antioxidants. This project aimed to evaluate antioxidant activity of ethanolic and aqueous extracts from cabbage (Brassicca oleracea L. var. capitata L.) measured by DPPH and Hydroxyl radical scavenging method. The results show that averaged antioxidant activity measured in ethanolic extract (µmol Ascorbic acid equivalent/g fresh mass) were 7.316 ± 0.715 and 4.66 ± 1.029 as determined by DPPH and Hydroxyl radical scavenging activity assays respectively. Averaged antioxidant activity measured in aqueous extract (µmol Ascorbic acid equivalent/g fresh mass) were 15.141 ± 2.092 and 4.955 ± 1.975 as determined by DPPH and Hydroxyl radical scavenging activity assays respectively.
Abstract: Free radicals are atoms or molecules with unpaired electrons. Many diseases are caused by free radicals. Normally, free radical formation is controlled naturally by various beneficial compounds known as antioxidants. Several analytical methods have been used for qualitative and quantitative determination of antioxidants, and each has its own specificity. This project aimed to evaluate antioxidant activity of ethanolic and aqueous extracts from the rice paddy herb (Limnophila aromatica (Lam.) Merr.) measured by DPPH and Hydroxyl radical scavenging method. The results showed that averaged antioxidant activity measured in ethanolic extract (µmol Ascorbic acid equivalent/g fresh mass) were 67.09± 4.99 and 15.55±4.82 as determined by DPPH and Hydroxyl radical scavenging activity assays, respectively. Averaged antioxidant activity measured in aqueous extract (µmol Ascorbic acid equivalent/g fresh mass) were 21.08±1.25 and 10.14±3.94 as determined by DPPH and Hydroxyl radical scavenging activity assays respectively.
Abstract: Antioxidant properties and nutritive values of raw and cooked Pool barb, Puntius sophore (Hamilton-Buchanan) of Eastern Himalayas, India were determined. Antioxidant activity of the methanol extract of the raw, steamed, fried and curried Pool barb was evaluated by using 1,1-diphenyl-2-picrylhydrazyl (DPPH) scavenging assay. In DPPH scavenging assay the IC50 value of the raw, steamed, fried and curried Pool barb was 1.66 micro-gram/ml, 16.09 micro-gram/ml, 8.99 micro-gram/ml, 0.59 micro-gram/ml whereas the IC50 of the reference ascorbic acid was 46.66miro-gram/ml. These results showed that the fish have high antioxidant activity. Protein content was found highest in raw (20.50±0.08%) and lowest in curried (18.66±0.13%). Moisture content in raw, fried and curried was 76.35±0.09, 46.27±0.14 and 57.46±0.24 respectively. Lipid content was recorded 2.46±0.14% in raw and 21.76±0.10% in curried. Ash content varied from 12.57±0.11 to 22.53±0.07%. The total amino acids varied from 36.79±0.02 and 288.43±0.12 mg/100g. Eleven essential mineral elements were found abundant in all the samples. The samples had considerable amount of Fe ranging from 152.17 to 320.39 milli-gram/100gram, Ca 902.06 to 1356.02 milli-gram/100gram, Zn 91.07 to 138.14 milli-gram/100gram, K 193.25 to 261.56 milli-gram/100gram, Mg 225.06 to 229.10 milli-gram/100gram. Ni was not detected in the curried fish. The Mg and K contents were significantly decreased in frying method; however the Fe, Cu, Ca, Co and Mn contents were increased significantly in all the cooked samples. Abstract: Graphene-based materials were prepared by chemical reduction of covalently functionalized graphene oxide with environmentally friendly agents. Two varying stoichiometry of graphene oxide (GO) induced by using different chemical preparation conditions, further covalent functionalization of the GO materials with 1-ethyl-3-(3-dimethylaminopropyl) carbodiimide hydrochloride / N-hydroxysuccinimide and ascorbic acid and sodium bisulfite as reducing agents were exploited in order to obtain controllable properties of the final solution-based graphene materials. The obtained materials were characterized by thermo-gravimetric analysis, Fourier transform infrared and Raman spectroscopy and X-ray diffraction. The results showed successful functionalization of the GO materials, while a comparison of the deoxygenation efficiency of the two-type functionalized graphene oxide suspensions by the different reducing agents has been made, revealing the strong dependence of their properties on the GO structure and reducing agents.
Abstract: Ascorbic acid (AA), commonly known as vitamin C, is essential for normal functioning of the body and maintenance of metabolic integrity. Among its various roles are as an antioxidant, a cofactor in collagen formation and other reactions, as well as reducing physical stress and maintenance of the immune system. Recent collaborative research between the Australian Defence Science and Technology Organisation (DSTO) in Scottsdale, Tasmania and RMIT University has sought to overcome the problems arising from the inherent instability of ascorbic acid during processing and storage of foods. The recent work has demonstrated the potential of microencapsulation by spray drying as a means to enhance retention. The purpose of this current study has been focused upon the influence of spray drying conditions on the properties of encapsulated ascorbic acid. The process was carried out according to a central composite design. Independent variables were: inlet temperature (80-120° C) and feed flow rate (7-14 mL/minute). Process yield, ascorbic acid loss, moisture content, water activity and particle size distribution were analysed as responses. The results have demonstrated the potential of microencapsulation by spray drying as a means to enhance retention. Vitamin retention, moisture content, water activity and process yield were influenced positively by inlet air temperature and negatively by feed flow rate.
Abstract: Tumor cells have an invasive and metastatic phenotype
that is the main cause of death for cancer patients. Tumor
establishment and penetration consists of a series of complex
processes involving multiple changes in gene expression. In this study,
intraperitoneal administration of a high concentration of ascorbic acid
inhibited tumor establishment and decreased tumor mass in BALB/C
mice implanted with S-180 sarcoma cancer cells. To identify proteins
involved in the ascorbic acid-mediated inhibition of tumor
progression, changes in the tumor proteome associated with ascorbic
acid treatment of BALB/C mice implanted with S-180 were
investigated using two-dimensional gel electrophoresis and mass
spectrometry. Twenty protein spots were identified whose expression
was different between control and ascorbic acid treatment groups.
Abstract: Prickly pear (Opuntia spp) fruit has received renewed
interest since it contains a betalain pigment that has an attractive
purple colour for the production of juice. Prickly pear juice was
prepared by homogenizing the fruit and treating the pulp with 48 g of
pectinase from Aspergillus niger. Titratable acidity was determined
by diluting 10 ml prickly pear juice with 90 ml deionized water and
titrating to pH 8.2 with 0.1 N NaOH. Brix was measured using a
refractometer and ascorbic acid content assayed
spectrophotometrically. Colour variation was determined
colorimetrically (Hunter L.a.b.). Hunter L.a.b. analysis showed that
the red purple colour of prickly pear juice had been affected by juice
treatments. This was indicated by low light values of colour
difference meter (CDML*), hue, CDMa* and CDMb* values. It was
observed that non-treated prickly pear juice had a high (colour
difference meter of light) CDML* of 3.9 compared to juice

Abstract: This work attempts to improve the permselectivity of poly-ortho-phenylenediamine (PPD) coating for glutamate biosensor applications on Pt microelectrode, using constant potential amperometry and cyclic voltammetry. Percentage permeability of the modified PPD microelectrode was carried out towards hydrogen peroxide (H2O2) and ascorbic acid (AA) whereas permselectivity represents the percentage interference by AA in H2O2 detection. The 50-μm diameter Pt disk microelectrode showed a good permeability value toward H2O2 (95%) and selectivity against AA (0.01%) compared to other sizes of electrode studied here. The electrode was further modified with glutamate oxidase (GluOx) that was immobilized and cross linked with glutaraldehyde (GA, 0.125%), resulting in Pt/PPD/GluOx-GA electrode design. The maximum current density Jmax and apparent Michaelis constant, KM, obtained on Pt/PPD/GluOx-GA electrodes were 48 μA cm-2 and 50 μM, respectively. The linear region slope (LRS) was 0.96 μA cm-2 mM-1. The detection limit (LOD) for glutamate was 3.0 ± 0.6 μM. This study shows a promising glutamate microbiosensor for brain glutamate detection.
