Abstract: This research aims to study how to design and create the media to promote Thai cuisine. The study used qualitative research methods by using in-depth interview 3 key informants who have experienced in the production of food or cooking shows in television programs with an aspect of acknowledging Thai foods. The results showed that visual presentation is divided into four categories. First, the light meals should be presented in details via the close-up camera with lighting to make the food look more delicious. Then the curry presentation should be arranged a clear and crisp light focus on a colorful curry paste. Besides the vision of hot steam floating from the plate and a view of curry spread on steamed rice can call great attentions. Third, delivering good appearances of the fried or spicy foods, the images must allow the audiences to see the shine of the coat covering the texture of the food and the colorful of the ingredients. Fourth, the presentation of sweets is recommended to focus on details of food design, composition, and layout.
Abstract: Silver ions (Ag+) and their compounds are consequentially toxic to microorganisms, showing biocidal effects on many species of bacteria. Silver-phosphate (or silver orthophosphate) is one of these compounds, which is famous for its antimicrobial effect and catalysis application. In the present study, a green method was presented to synthesis silver-phosphate nanoparticles using Sporosarcina pasteurii. The composition of the biosynthesized nanoparticles was identified as Ag3PO4 using X-ray Diffraction (XRD) and Energy Dispersive Spectroscopy (EDS). Also, Fourier Transform Infrared (FTIR) spectroscopy showed that Ag3PO4 nanoparticles was synthesized in the presence of biosurfactants, enzymes, and proteins. In addition, UV-Vis adsorption of the produced colloidal suspension approved the results of XRD and FTIR analyses. Finally, Transmission Electron Microscope (TEM) images indicated that the size of the nanoparticles was about 20 nm.
Abstract: Due to increasing environmental awareness jute fibers are more often used in fiber reinforced composites. In the Sheet Molding Compound (SMC) process, the mold cavity is filled via material flow allowing more complex component design. But, the difficulty of using jute fibers in this process is the decreased capacity of fiber movement in the mold. A comparative flow study with jute nonwoven reinforced SMC was conducted examining the influence of the fiber volume content, the grammage of the jute nonwoven textile and a mechanical modification of the nonwoven textile on the flowability. The nonwoven textile reinforcement was selected to support homogeneous fiber distribution. Trials were performed using two SMC paste formulations differing only in filler type. Platy-shaped kaolin with a mean particle size of 0.8 μm and ashlar calcium carbonate with a mean particle size of 2.7 μm were selected as fillers. Ensuring comparability of the two SMC paste formulations the filler content was determined to reach equal initial viscosity for both systems. The calcium carbonate filled paste was set as reference. The flow study was conducted using a jute nonwoven textile with 300 g/m² as reference. The manufactured SMC sheets were stacked and centrally placed in a square mold. The mold coverage was varied between 25 and 90% keeping the weight of the stack for comparison constant. Comparing the influence of the two fillers kaolin yielded better results regarding a homogeneous fiber distribution. A mold coverage of about 68% was already sufficient to homogeneously fill the mold cavity whereas for calcium carbonate filled system about 79% mold coverage was necessary. The flow study revealed a strong influence of the fiber volume content on the flowability. A fiber volume content of 12 vol.-% and 25 vol.-% were compared for both SMC formulations. The lower fiber volume content strongly supported fiber transport whereas 25 vol.-% showed insignificant influence. The results indicate a limiting fiber volume content for the flowability. The influence of the nonwoven textile grammage was determined using nonwoven jute material with 500 g/m² and a fiber volume content of 20 vol.-%. The 500 g/m² reinforcement material showed inferior results with regard to fiber movement. A mold coverage of about 90 % was required to prevent the destruction of the nonwoven structure. Below this mold coverage the 500 g/m² nonwoven material was ripped and torn apart. Low mold coverages led to damage of the textile reinforcement. Due to the ripped nonwoven structure the textile was modified with cuts in order to facilitate fiber movement in the mold. Parallel cuts of about 20 mm length and 20 mm distance to each other were applied to the textile and stacked with varying orientations prior to molding. Stacks with unidirectional orientated cuts over stacks with cuts in various directions e.g. (0°, 45°, 90°, -45°) were investigated. The mechanical modification supported tearing of the textile without achieving benefit for the flowability.
Abstract: In this study, antimicrobial effect of Greek clover was determined with usage of MIC (minimum inhibition concentration) and agar diffusion method. Moreover, pH, water activity and microbial change were determined during storage of fenugreek paste. At first part of our study, microbial load of spices was evaluated. Two different fenugreek pastes were produced with mixing of Greek clover, spices, garlic and water. Fenugreek pastes were stored at 4 °C. At the second part, antimicrobial effect of Greek clover was determined on Escherichia coli, Staphylococcus aureus, Bacillus subtilis, Debaryomyces hansenii, Aspergillus parasiticus, Candida rugosa, Mucor spp., when the concentrations of Greek clover were 8%, 12% and 16%. According to the results obtained, mould growth was determined at 15th and 30th days of storage in first and second fenugreek samples, respectively. Greek clover showed only antifungal effect on Aspergillus parasiticus at previously mentioned concentrations.
Abstract: In this study, dynamic responses of composite plates on elastic foundations subjected to impact and moving loads are investigated. The first order shear deformation (FSDT) theory is used for moderately thick plates. Pasternak-type (two-parameter) elastic foundation is assumed. Elastic foundation effects are integrated into the governing equations. It is assumed that plate is first hit by a mass as an impact type loading then the mass continues to move on the composite plate as a distributed moving loading, which resembles the aircraft landing on airport pavements. Impact and moving loadings are modeled by a mass-spring-damper system with a wheel. The wheel is assumed to be continuously in contact with the plate after impact. The governing partial differential equations of motion for displacements are converted into the ordinary differential equations in the time domain by using Galerkin’s method. Then, these sets of equations are solved by using the Runge-Kutta method. Several parameters such as vertical and horizontal velocities of the aircraft, volume fractions of the steel rebar in the reinforced concrete layer, and the different touchdown locations of the aircraft tire on the runway are considered in the numerical simulation. The results are compared with those of the ABAQUS, which is a commercial finite element code.
Abstract: The paper describes the results from a research project about repair of welds. The repair was carried out by grinding the flawed seams and re-welding them. The main task was to determine the FAT classes of original state and after repair of seams according to the assessment procedures, such as nominal, structural and effective notch stress approach. The first part shows the results of the tests, the second part encloses numerical analysis and evaluation of results to determine the fatigue strength classes according to three assessment procedures.
Abstract: In this paper, vibration of a nonlinear composite beam is analyzed and then an active controller is used to control the vibrations of the system. The beam is resting on a Winkler-Pasternak elastic foundation. The composite beam is reinforced by single walled carbon nanotubes. Using the rule of mixture, the material properties of functionally graded carbon nanotube-reinforced composites (FG-CNTRCs) are determined. The beam is cantilever and the free end of the beam is under follower force. Piezoelectric layers are attached to the both sides of the beam to control vibrations as sensors and actuators. The governing equations of the FG-CNTRC beam are derived based on Euler-Bernoulli beam theory Lagrange- Rayleigh-Ritz method. The simulation results are presented and the effects of some parameters on stability of the beam are analyzed.
Abstract: The present paper describes the study of paste tailings prepared in laboratory using gold tailings, produced in a Finnish gold mine with the incorporation of coal ash. Natural leaching tests were conducted with the original materials (tailings, fly and bottom ashes) and also with paste mixtures that were prepared with different percentages of tailings and ashes. After leaching, the solid wastes were physically and chemically characterized and the results were compared to those selected as blank – the unleached samples. The tailings and the coal ash, as well as the prepared mixtures, were characterized, in addition to the textural parameters, by the following measurements: grain size distribution, chemical composition and pH. Mixtures were also tested in order to characterize their mechanical behavior by measuring the flexural strength, the compressive strength and the consistency. The original tailing samples presented an alkaline pH because during their processing they were previously submitted to pressure oxidation with destruction of the sulfides. Therefore, it was not possible to ascertain the effect of the coal ashes in the acid mine drainage. However, it was possible to verify that the paste reactivity was affected mostly by the bottom ash and that the tailings blended with bottom ash present lower mechanical strength than when blended with a combination of fly and bottom ash. Surface paste disposal offer an attractive alternative to traditional methods in addition to the environmental benefits of incorporating large-volume wastes (e.g. bottom ash). However, a comprehensive characterization of the paste mixtures is crucial to optimize paste design in order to enhance engineer and environmental properties.
Abstract: Lightweight concrete is being used in the construction industry as a building material in its own right. Ultra-lightweight concrete can be applied as a filler and support material for the manufacturing of composite building materials. This paper is about the development of a stable and reproducible ultra-lightweight concrete with the inclusion of poly-lactic acid (PLA) beads and assessing the feasibility of PLA as a lightweight aggregate that will deliver advantages such as a more eco-friendly concrete and a non-petroleum polymer aggregate. In total, sixty-three samples were prepared and the effectiveness of mineral admixture, curing conditions, water-cement ratio, PLA ratio, EPS ratio and perlite ratio on compressive strength of perlite concrete are studied. The results show that PLA particles are sensitive to alkali environment of cement paste and considerably shrank and lost their strength. A higher compressive strength and a lower density was observed when expanded polystyrene (EPS) particles replaced PLA beads. In addition, a set of equations is proposed to estimate the water-cement ratio, cement content and compressive strength of perlite concrete.
Abstract: This research paper reports on the feasibility and viability of eggshells ash and its effects on the water content and setting time of cement. An experiment was carried out to determine the quantity of water required in order to follow standard cement paste of normal consistency in accordance with MS EN 196-3:2007. The eggshells ash passing the 90µm sieve was used in the investigation. Eggshells ash with percentage of 0%, 0.1%, 0.5%, 1.0%, 1.5% and 2.0% were constituted to replace the cement. Chemical properties of both eggshells ash and cement are compared. From the results obtained, both eggshells ash and cement have the same chemical composition and primary composition which is the calcium compounds. Results from the setting time show that by adding the eggshells ash to the cement, the setting time of the cement decreases. In short, the higher amount of eggshells ash, the faster the rate of setting and apply to all percentage of eggshells ash that were used in this investigation. Both initial and final setting times fulfill the setting time requirements by Malaysian Standard. Hence, it is suggested that eggshells ash can be used as an admixture in concrete mix.
Abstract: Fresh concrete has one of dynamic properties known
as slump. Slump of concrete is design to compatible with placing
method. Due to hydration reaction of cement, the slump of concrete
is loss through time. Therefore, delayed concrete probably get reject
because slump is unacceptable. In order to recover the slump of
delayed concrete the second dose of superplasticizer (naphthalene
based type F) is added into the system, the slump recovery can be
done as long as the concrete is not setting. By adding superplasticizer
as solution for recover unusable slump loss concrete may affects
other concrete properties. Therefore, this paper was observed setting
times and compressive strength of concrete after being re-dose with
chemical admixture type F (superplasticizer, naphthalene based) for
slump recovery. The concrete used in this study was fly ash concrete
with fly ash replacement of 0%, 30% and 50% respectively. Concrete
mix designed for test specimen was prepared with paste content (ratio
of volume of cement to volume of void in the aggregate) of 1.2 and
1.3, water-to-binder ratio (w/b) range of 0.3 to 0.58, initial dose of
superplasticizer (SP) range from 0.5 to 1.6%. The setting times of
concrete were tested both before and after re-dosed with different
amount of second dose and time of dosing. The research was
concluded that addition of second dose of superplasticizer would
increase both initial and final setting times accordingly to dosage of
addition. As for fly ash concrete, the prolongation effect was higher
as the replacement of fly ash increase. The prolongation effect can
reach up to maximum about 4 hours. In case of compressive strength,
the re-dosed concrete has strength fluctuation within acceptable range
of ±10%.
Abstract: This paper aimed to introduce the solution of concrete
slump recovery using chemical admixture type-F (superplasticizer,
naphthalene base) to the practice in order to solve unusable concrete
problem due to concrete loss its slump, especially for those tropical
countries that have faster slump loss rate. In the other hand, randomly
adding superplasticizer into concrete can cause concrete to segregate.
Therefore, this paper also develops the estimation model used to
calculate amount of second dose of superplasticizer need for concrete
slump recovery. Fresh properties of ordinary Portland cement
concrete with volumetric ratio of paste to void between aggregate
(paste content) of 1.1-1.3 with water-cement ratio zone of 0.30 to
0.67 and initial superplasticizer (naphthalene base) of 0.25%-1.6%
were tested for initial slump and slump loss for every 30 minutes for
one and half hour by slump cone test. Those concretes with slump
loss range from 10% to 90% were re-dosed and successfully
recovered back to its initial slump. Slump after re-dosed was tested
by slump cone test. From the result, it has been concluded that, slump
loss was slower for those mix with high initial dose of
superplasticizer due to addition of superplasticizer will disturb
cement hydration. The required second dose of superplasticizer was
affected by two major parameters, which were water-cement ratio
and paste content, where lower water-cement ratio and paste content
cause an increase in require second dose of superplasticizer. The
amount of second dose of superplasticizer is higher as the solid
content within the system is increase, solid can be either from cement
particles or aggregate. The data was analyzed to form an equation use
to estimate the amount of second dosage requirement of
superplasticizer to recovery slump to its original.
Abstract: Geopolymer composites reinforced with flax fabrics
and nanoclay are fabricated and studied for physical and mechanical
properties using X-Ray Diffraction (XRD), Fourier Transform
Infrared Spectroscopy (FTIR), and Scanning Electron Microscope
(SEM). Nanoclay platelets at a weight of 1.0%, 2.0%, and 3.0% were
added to geopolymer pastes. Nanoclay at 2.0 wt.% was found to
improve density and decrease porosity while improving flexural
strength and post-peak toughness. A microstructural analysis
indicated that nanoclay behaves as filler and as an activator
supporting geopolymeric reaction while producing a higher content
geopolymer gel improving the microstructure of binders. The process
enhances adhesion between the geopolymer matrix and flax fibres.
Abstract: Red pepper (Capsicum annum L.) has long been
recognized as a good source of antioxidants, being rich in ascorbic
acid and other phytochemicals. In Turkish cuisine red pepper is
sometimes consumed raw in salads and baked as a garnish, but its
most wide consumption type is red pepper paste. The processing of
red pepper into pepper paste includes various thermal treatment steps
such as heating and pasteurizing. There are reports demonstrating an
enhancement or reduction in antioxidant activity of vegetables after
thermal treatment. So this study was conducted to investigate the
total phenolic, ascorbic acid and total carotenoids as well as free
radical scavenging activity of raw red pepper and various red pepper
pastes obtainable on the market. The samples were analyzed for
radical-scavenging activity (RSA) and total polyphenol (TP) content
using 1,1-diphenyl-2-picrylhydrazyl (DPPH) and Folin-Ciocalteu
methods, respectively. Total carotenoids and ascorbic acid contents
were determined spectrophotometrically. Results suggest that hot
pepper paste contained significantly (P0.05) difference in RSA, ascorbic acid and total carotenoids
content between sweet and hot red pepper paste products. It is
concluded that the red pepper paste, that has a wide range of
consumption in Turkish cuisine, presents a good dose of phenolic
compounds and antioxidant capacity and it should be regarded as a
functional food.
Abstract: Natural admixtures provide concrete with enhanced
properties but their processing end up making them very expensive
resulting in increase to cost of concrete. In this study the effect
of Gum from Acacia Karroo (GAK) as set-retarding admixture
in cement pastes was studied. The possibility of using GAK as
water reducing admixture both in cement mortar concrete was
also investigated. Cement pastes with different dosages of GAK
were prepared to measure the setting time using different dosages.
Compressive strength of cement mortars with 0.7, 0.8 and 0.9%
weight of cement and w/c ratio of 0.5 were compared to those with
water cement (w/c) ratio of 0.44 but same dosage of GAK. Concrete
samples were prepared using higher dosages of GAK (1, 2 and 3%
wt of cement) and a water bidder (w/b) of 0.61 were compared to
those with the same GAK dosage but with reduced w/b ratio. There
was increase in compressive strength of 9.3% at 28 days for cement
mortar samples with 0.9% dosage of GAK and reduced w/c ratio.
Abstract: In this paper, analysis of an infinite beam resting on
multilayer tensionless extensible geosynthetic reinforced granular
fill-poor soil system overlying soft soil strata under moving load with
constant velocity is presented. The beam is subjected to a
concentrated load moving with constant velocity. The upper
reinforced granular bed is modeled by a rough membrane embedded
in Pasternak shear layer overlying a series of compressible nonlinear
winkler springs representing the underlying the very poor soil. The
multilayer tensionless extensible geosynthetic layer has been
assumed to deform such that at interface the geosynthetic and the soil
have some deformation. Nonlinear behaviour of granular fill and the
very poor soil has been considered in the analysis by means of
hyperbolic constitutive relationships. Governing differential
equations of the soil foundation system have been obtained and
solved with the help of appropriate boundary conditions. The solution
has been obtained by employing finite difference method by means of
Gauss-Siedal iterative scheme. Detailed parametric study has been
conducted to study the influence of various parameters on the
response of soil–foundation system under consideration by means of
deflection and bending moment in the beam and tension mobilized in
the geosynthetic layer. These parameters include magnitude of
applied load, velocity of load, damping, ultimate resistance of poor
soil and granular fill layer. Range of values of parameters has been
considered as per Indian Railway conditions. This study clearly
observed that the comparisons of multilayer tensionless extensible
geosynthetic reinforcement with poor foundation soil and magnitude
of applied load, relative compressibility of granular fill and ultimate
resistance of poor soil has significant influence on the response of
soil–foundation system.
Abstract: The main parameters affecting the workability are the
water content, particle size, and the total surface of the grains, as long
as the mixing water begins by wetting the surface of the grains and
then fills the voids between the grains to form entrapped water, the
quantity of water remaining is called free water. The aim of this study is to undertake a fractal approach through
the relationship between the concrete formulation parameters and
workability. To develop this approach a series of concrete taken from
the literature was investigated by varying formulation parameters
such as G/S, the quantity of cement C and the quantity of water W. We also call another model as the model of water layer thickness
and model of paste layer thickness to judge their relevance, hence the
following results: the relevance of the water layer thickness model is
considered as a relevant when there is a variation in the water
quantity. The model of the paste layer thickness is only applicable if
we considered that the paste is made with the grain value Dmax =
2.85: value from which we see a stability of the model.
Abstract: Due to rapid advancement of powerful image
processing software, digital images are easy to manipulate and
modify by ordinary people. Lots of digital images are edited for a
specific purpose and more difficult to distinguish form their original
ones. We propose a clustering method to detect a copy-move image
forgery of JPEG, BMP, TIFF, and PNG. The process starts with
reducing the color of the photos. Then, we use the clustering
technique to divide information of measuring data by Hausdorff
Distance. The result shows that the purposed methods is capable of
inspecting the image file and correctly identify the forgery.
Abstract: Properties of Portland cement mixtures with various
fractions of metakaolin were studied. 10% of Portland cement CEM I
42.5 R was replaced by different fractions of high reactivity
metakaolin with defined chemical and mineralogical properties.
Various fractions of metakaolin were prepared by jet mill classifying
system. There is a clear trend between fineness of metakaolin and
hydration heat development. Due to metakaolin presence in mixtures
the compressive strength development of mortars is rather slower for
coarser fractions but 28-day flexural strengths are improved for all
fractions of metakaoline used in mixtures compared to reference
sample of pure Portland cement. Yield point, plastic viscosity and
adhesion of fresh pastes are considerably influenced by fineness of
metakaolin used in cement pastes.
Abstract: The objective of this study was to evaluate the
physical and chemical characteristics of Serra da Estrela cheese and
compare these results with those of the sensory analysis. For the
study were taken six samples of Serra da Estrela cheese produced
with 6 different ecotypes of thistle in a dairy situated in Penalva do
Castelo. The chemical properties evaluated were moisture content,
protein, fat, ash, chloride and pH; the physical properties studied
were color and texture; and finally a sensory evaluation was
undertaken. The results showed moisture varying in the range 40-
48%, protein in the range 15-20%, fat between 41-45%, ash between
3.9-5.0% and chlorides varying from 1.2 to 3.0%. The pH varied
from 4.8 to 5.4. The textural properties revealed that the crust
hardness is relatively low (maximum 7.3 N), although greater than
flesh firmness (maximum 1.7 N), and also that these cheeses are in
fact soft paste type, with measurable stickiness and intense
adhesiveness. The color analysis showed that the crust is relatively
light (L* over 50), and with a predominant yellow coloration (b*
around 20 or over) although with a slight greenish tone (a* negative).
The results of the sensory analysis did not show great variability for
most of the attributes measured, although some differences were
found in attributes such as crust thickness, crust uniformity, and
creamy flesh.
